COOKING FROM THE HEART
Dear my culinary friends, when summer comes back
than our old Belgrade friends come back
Today with us, again, is... how am I going to put it...
she is from Belgrade but travels and lives across that big ocean
She is here today to show us her food skills
and some philosophies about life
Ms Milica Milovanovic,
Welcome
Thank you, it's good to see you
You live in the US...
I live in New York for the past 16 years,
I lived in Massachusetts for 4-5 years
where I attended Kushi institute
and completed all possible Macrobiotic levels with Michio Kushi
and graduated with a certificate to teach Macrobiotics worldwide.
So you are teacher of Macrobiotics
Yes
And what is Macrobiotics exactly?
We always speculate that Macrobiotics is this and that,
some say that it is a diet where you eat grass,
or Macrobiotics is when you want to be hungry...
That is all true, Macrobiotics is a traditional way of living
It is a process of observing life, day by day,
in order to achieve personal freedom and...
Destiny
Yes, destiny. Sorry for my pause
I know what you are trying to say, very good
So if you are
feeling hot, if you feel happy,
unhappy so that you can change it.
So that means that if I am unhappy
I can change that to happiness with Macrobiotics?
Yes you can, if you chew more, if you eat regularly,
if your meals are well-organized,
if you go to sleep at the proper time,
if you get enough rest you will be happier.
RECIPE OF THE DAY
Here I am with Milica, Ms Milica what are we cooking today?
I have 3 cups of juice in the pot and I’m going to add...
What kind of juice it is?
It’s an apple juice.
I will add 1 cup of water
What are you preparing for us today?
I am making polenta summer cake with fruit.
Polenta? Let’s try that
It Is derived from corn and it has cooling effects on your body,
it has relaxing effects
I'll have to add...
So that means when I get irritated by something,
I eat that cake and I will be fine?
yes, yes
You relax immediately
This is what professional says
You just added a pinch of salt?
Just a pinch of salt because it will make the meal sweeter.
When you add some salt, which is the opposite
of the sugar, than sugar goes to the surface
and this is how the cake will get sweet without the sugar added.
Heh, really it is a science.
Okay let’s see it, really interesting
We will put this to boil, when it boils we will add polenta.
We can add it right away, it’s not a big deal.
Then we are going to stir slowly.
When polenta boils, since it is instant polenta,
it will need about 5 minutes to cook
Oh yes, this is instant polenta.
Yes. After it boils, we are going to add some fruit
and pour it in a pan and cut it in cube shapes that look nice for serving.
Here it is, in 5 minutes polenta is cooked, it started to thicken.
Now we will add sliced apricots
and cook them in polenta for 2-3 minutes so that they can soften a bit.
And then we are going to add some raspberries.
Usually we cut apricots, or any round fruit,
in 4 pieces
Very good.
because that way it is easier to eat it, cook it or taste it.
We are not going to cut raspberries
Ok, they are already small.
This is all going to look nice when done
Have you ever thought of putting apricots in polenta?
Just 2 more minutes,
Ok
and then we will add raspberries and we are done.
So that’s it, we just need to wait until it cool off.
You said we pour polenta in the pan and set it aside to cool.
Yes I will show you that.
You can also make this meal with any kind of fruit,
any seasonal fruit is good.
Can we add some grapes?
No, grapes have a lot of sugar
You can add raspberries, blueberries, cherries, oranges.
Mhm, ok.
Summer is really hot...
Apples?
Or apples, that is why I put apple juice in it
So apple juice is instead of apples
We didn’t add any water, just apple juice and a pinch of salt
Yes, ratio of polenta to water is 1 to 4, add a pinch of salt
and cook for 5 minutes
The whole meal can be cooked in 10 minutes,
very simple but very efficient...
Healthy dessert
Oh, I can’t wait. So we are just going to add
some raspberries and then we can taste it.
You can see how this looks really beautiful.
Here, it’s done. We spent only 10 minutes.
Now we pour it into a pan and wait for it to cool off
Do you want to add more raspberries?
I think that is enough. We can add just a couple more
Ok, good
So Milica, you poured polenta into the mold
Yes, I poured everything in this mold,
and before that I coated the mold with water
so that polenta doesn’t stick.
After this cools off we can cut it in any shape we want.
So it’s like a roll cake. Super.
SWEET POLENTA:
Polenta, 6dl (20 oz) of apple juice, apricots,
400gr (14 oz) of raspberries, pinch of salt, 2dl (7 oz) of water.
FOOD FOR THE EYES
If someone asked me what this is,
and if I replied it is a corn bread, no one would believe me.
Great. It’s really sweet.
It has this nice sweet and sour taste
From fruit
From fruit, yes, very refreshing.
...ideal for the summer and easy to make.
Really good
Only 10 minutes
We just left it to cool off for a couple of minutes and that was it.
That’s all
If I can say, today we regaled properly, we didn’t do anything wrong.
Yes, it was really nice.
