Why do Mormons wear white shirts? All of the missionaries I see are wearing white dress
shirts and a tie. Usually with a black jacket and slacks to boot.
They want everyone to be blinded by the light.

I don't know. To hold in their long hair? This certainly does not apply to what Mormons

OK, don't get your underwear in a bunch. There is a simple and logical reason. Mormon missionaries
and their leaders value conformity. Wearing the white shirts is a symbol of being professional
and clean cut. They all want to look the same. It is also a representation that they are
doing the Lord's work.
Those who work in their hometown, don't always wear white shirts. They are encouraged to
though, even the bishops and church leaders always wear white shirts.
Brides generally wear white, as it is a tradition, it is similar with Mormons. It is not like
you will be kicked out of the faith if you chose to wear a colored shirt to church, but
it is frowned upon.
I guess it is similar to how the Amish wear dark pants with suspenders and colored shirts.
