Hi, I'm Vicky. I'm the development chef at MSK, and today I'm going to talk to you about
Ultratex Ultratex solves the problem of viscosity.
It's a gluten-free, corn-based, instant-thickening starch and it really is the essential ingredient
for every kitchen. Now I'm going to show you how to thicken a
sauce using Ultratex. Here I've made a beef sauce. I've got the
right taste; it's not too bitter, not too salty, just a bit thin.
I'm just going to add a small amount of Ultratex, just to increase the viscosity, thicken it
up a little bit. Now this sauce is actually warm, but you can
add this to hot or cold, and it won't change from hot to cold.
There we go: a thickened sauce. Ok, now I'm going to show you how to do a
really simple fluid gel using Ultratex. Now I'm using a beetroot juice, but you can
use any fruit or vegetable juices. Simply sprinkle over some Ultratex and give it a
stir. I find this is the easiest way to do it; just sprinkle it over and you can stop
whenever it's got the desired consistency. Just let it stand for a couple of minutes
just to fully hydrate. You can also add Ultratex into fruit or vegetable
purees if you've got a little bit of leeching of liquids from them, to pull it all back
together - it won't bleed on the plate. Now once you've got your desired consistency,
you can just spoon that onto a plate. It's completely freeze-thaw stable and it won't
skin up on the plate. Ok, if your fluid gel has become a little
bit too thick or you've added a little bit too much Ultratex to your sauces or whatever,
it's easy, literally. Pour back in a little bit of your juice or sauce and it will just
thin right back down again for you. Again, if you put a little bit too much liquid back
in, add a little bit more Ultratex to thicken it back up again. It's as simple as that.
Ok, so Ultratex can even be used to make tuiles. So simply thicken a juice; if you use a juice
it makes a really nice translucent tuile. Thicken up a juice, spread it onto a silpat
and just dry it out in a dehydrator or low oven.
So this is a tuile that I've made from beetroot juice and some Ultratex, and as you can see
you get a great snap to it and a lovely translucency and a really nice shine.
