Ready for my Recipe?
I'm going to make one of my favourite course
For starter, "alheira"(check description) with greens and quail eggs, in the oven
and i'm going to make too a course of potatoes with baked Codfish
and finally, an yougurt dessert
The ingredients for the starter are
home made "alheira" from my aunt from Mirandela, boiled greens, quial eggs and chive
for the main course you need codfish
potatoes to bake, carrot to boil, garlic and coriander, salt and olive oil
boiled green and a mix of honey, mustard and olive oil
for dessert, yogurt (greek recipe is preferred), fresh raspberries and cereals with some chocolate chips)
I have already the codfish, the potatoes and the carrots boiling, so then we can put hem in the oven
And you ask me "but Mónica, why do you love so much cooking?"
Simple, every vacations with my family, i always woke up early with my father to go to the market purchase fresh fish and shellfish
then we cooked together, he was the chef and i was his assistent
and the thing started there
Meanwhile, i developed my cuisine and started to realise that i enjoyed very much cooking
i discovered the fisrt Jamie Oliver's show, at his house, in a relaxed and familiar way
and i though "wow, cooking is very funny"
I attended several workshops, and today here i am, always in the kitchen, ready to find new flavors
usually, codfish asks for parsley, but mine askes for coriander
chop finely some chive
chop plenty garlic
I'm going now to sauté the greens
i have already the saute warm, join a bit of home made olive oil, plenty of it also
i've joined the garlic, it's very good with the greens and i'm going to let them bromw a bit
and next we add the greens
essential kitchen utensil: tongs, they're handy for everything
Why did i choose these course?
Well, first of all "alheira" is one the most popular products in the North of Portugal and they are amazing.
I'm "alheira-lover", as i used to say.
And codfish, because, in all my travelings, every time i said i'm portuguese
the answer was "ah, Portugal, potatoes with codfish"
We are the largest consumers of codfish in the World, but altough we don't have, i think it's the best product to identify our culture.
I'm going now to add the greens
Then sauté them, so that we can put in the oven our potatoes and codfish already boiled, reduce the carrots into puree
(in the kitchen's magic wand) and them in the oven for about 10 minutes
Now, i'm preparing the starter, i have here a ring that can go with the pan to the oven
i've brushed the bottom with olive oil and around
The "alheira in is the other pan, only to toughen a bit so i can slice it
i know i'm repeating the greens, but it tastes very good with "alheira"
and i have the ingredients at hand, so why not?
I'm not going to add that much, so that it doesn't get too green
Now the quail eggs, gently because they are difficult to work with, for the thin shells
Here is my recipe ready to be tasted
So, i'm all about food
