So, I'm gonna finish up by giving some quick answers to your questions from the comments.
First, I got a lot of specific questions from people like "Did you go to this country? Are you coming to this country?"
Just to run through those, Island countries, like NZ, Australia.. we didn't go, and sadly, won't this time.
With islands, you've usually gotta get there by plane, and then get away by plane, which raises your transportation costs by a lot.
We've been trying to travel places where we can get around overland, and that's let us keep our costs down somewhat.
We were asked if we went to Kashmir.... No, we didn't.
A year is actually surprisingly short.
We were restricted in terms of money and time, and there were a lot of places that we had originally wanted to go to
that we had to give up on for one reason or another.
But, if we have another chance to take a trip like this, those are the places we'll go.
Next, this guy with the easy name that I'm having trouble saying...
he or she asked if there was anything that was just totes crazy delicious.
Yeah, lots. We ate so much stuff. I can't count the number of times I was like THIS IS CRAZY TOTES DELICIOUS, YO.
But the one that comes to mind right away is Laotian laap (or larb).
Laap is made by stir-frying ground meat (pork or beef) with lemongrass, ginger, all kinds of good spices.
And then you cool it down, and serve it cold mixed with mint leaves as a salad.
And there's SO much mint in it, it's like more than 50% mint. I liked that business SO much. I wish I had some laap right now.
When I get back to Japan, I'm gonna try to make my own, for sure. Laap.

As far as stuff they don't have in Japan, peppers. Lots of different types of chili peppers.
In the Americas, and of course in SE Asia, they have all kinds of ground spicy chili peppers, and of course... the vegetables themselves.
They don't have those in Japan, so I think it's gonna suck going back and not being able to get those. I love spicy stuff.
As far as something we ALSO don't have in America, I'm gonna say good yogurt that's not too sweet.
The yogurt in Europe is just SO good.
You can use it in making sauces, or desserts, it's versatile and tasty
While we were in Europe, I had yogurt like 2 times a day almost every day.
Greek yogurt was the best. Soooo goood.
The opposite side of that question... well, for my wife, she didn't really care for the fact that Japan's Natto was hard to come by.
She wanted more readily available natto.
Whenever she started to miss Japan, she'd want natto, and we'd go try to find an Asian market that had it
And we did find it in a handful of places, but it wasn't that common.
