Ana Belén Noriega -- Secretary General of PEFC Spain PEFC Spain is developing the Project "Tastes of Sustainable Forests", aimed at grouping under the same"umbrella brand"
different wild food products such as mushrooms, truffles, aromatic herbs, Iberian cured ham, etc.
These products are very common in the Spanish gastronomy.
Grouping them under a same brand that provides guarantees on the sustainable origin, they will be more competitive in national and international markets.
The PEFC brand shows consumers that these wild food products come from sustainable forests and have been carefully traced along the supply chain,
from the collecting in the forests to final products.
The PEFC brand provides added value to wild food products coming from sustainable forests.
Through an umbrella brand, the project "Tastes of Sustainable Forests" supplies markets with products coming from PEFC certified forests
We have asked the best chefs in Spain how they value mushrooms, truffles, chestnuts, pine nuts, Iberian cured ham,
and they consider that these products are basic in the gastronomy and give the dishes a touch of flavor.
This special flavor comes from forests and PEFC wants forests to provide these products in a sustainable way.
This is what we are doing in the framework of the project "Tastes of Sustainable Forests"
We have also asked chefs if they, as well as their clients, would value positively products with a certified sustainable origin.
The 85% of the respondents commented that they as well as their clients would appreciate certified products.
This result encourages us to group under the PEFC brand wild food products and improve their position in the gourmet market.
