Hi, this is Elli from elliALiVE.com and I am very excited to show you today my secret
raw chocolate recipe. This recipe will not only satisfy your sugar cravings but will
nourish you on a very deep level, providing antioxidants, minerals, and vitamins that
your body needs to repair and build healthy cells.
On this side right here we have the base ingredients for the raw chocolate. On the far side we
have the 100% organic raw cacao butter. There is 1/4 pound that I use to batch my chocolates.
Behind it we have the 100% organic cacao powder, of which I use approximately 8 tablespoons
in this recipe. Then to sweeten the chocolate I use primarily 100% organic maple syrup.
However, this is not a raw sweetener so if you are a raw food purist you may want to
consider using raw honey instead. I have found that maple syrup for many reasons works the
best for me and I enjoy using it. I use approximately 4 to 6 tablespoons of sweetener depending
on the intensity per recipe. Right here we have organic vanilla extract which adds a
lovely light flavor to the chocolate but it's also an optional addition if you are again
a raw food purist you would probably prefer grating your own vanilla bean. And lastly
in the front we have 100% sea salt. I would highly encourage you to Google the difference
between sea salt and regular chemicalized salt.
On this plate you will find some wonderful super foods that you can add to your chocolate
base to have some kind of a consistency, make the chocolate slightly sweeter, or most importantly
add some very powerful nutrients. On this plate you will find some raw pecans, a special
blend of Chia seeds called Mila, raw cacao nibs, chlorella, mulberries, dates, hemp nuts,
and goji berries. You can also add raw cashew butter or herbs or spices.
The first step in this recipe is to take approximately 1/4 pound of your cacao butter and if it isn't
already in chunks and pieces you're going to want to cut it up so that the pieces melt
more easily and more quickly in your warm water bath.
On the stove we have a very simple warm water bath set up that is made up of a larger pan
or saucepan with approximately 1 inch of water and a smaller saucepan resting in it providing
a direct source of heat. Add your cacao butter to the inner pot and because cacao butter
has such a low melting temperature it will readily dissolve. The melting temperature
of cacao butter is around 87°F.
When your cacao butter is completely dissolved, add the 4 to 6 tablespoons of maple syrup
or sweetener to the mixture.
Next, take your cacao powder and if it is very clumpy sieve it through into the mixture
as well. This will make your chocolate a little smoother. Lastly, add approximately a half
to 3/4 teaspoon of vanilla extract or vanilla bean shreddings and just one pinch of salt.
Now you are finished with your raw cacao base.
Alright now for the fun part. This is the molding and customizing of the flavor of the
chocolates. I have found that the best molds are silicone ice cube trays like these hearts
and these shells right here that are readily available in baking stores and probably any
other store that carries baking goods. As an alternative you can also find chocolate
molds, plastic chocolate molds in your closest craft store or you can use a pie mold with
a removable bottom.
Alright, so I've chosen to make this large pie mold a goji berry chocolate. Next, I'm
going to add some cacao nibs to the small roses. I will add some a mulberry or two as
well as some chlorella. And some hemp nut seeds to the shells. And I will add some walnuts
and some Chia seeds to the hearts to create omega-3 heart healthy chocolates.
The last step is to simply pour the melted chocolate base into the chocolate molds. The
lovely thing about these ingredients is that they are not pungent and will not change the
flavor of the actual chocolate, only enhancing the texture and the ingredients will provide
extra nutrients.
Alright now go ahead and put your chocolates in the molds in either your refrigerator or
your freezer for 15 to 20 minutes so that they can harden.
Now it's time to pop the chocolates out of the molds. It's very easy to do that with
these silicone molds. Here I'll show you here how this works. Just go ahead and pop gently
squeeze on the top press down on the top of the molds in the plastic chocolate molds.
This one right here very easy just comes off may need to use a little bit of leverage.
Ahh look at this how beautiful is that. And then your shells also just pop out 123.
Alright and there we have it our phenomenally delicious and nutrient packed raw chocolates.
