Today we are going to make the dish of govind gatta.
This is a rajasthani dish and is very tasty.
So come, let’s prepare the dish of Govind and Gatta.
Gram Flour (Besan) - 1 cup
Carom seeds (Ajwain) - Less than ¼ cup
Salt (Namak) - ¼ tsp
Curd - 1 tbsp
Oil - 1 tbsp
These are the ingredients needed to prepare the dough for the gata.
These are the ingridients required for the stuffing.
Solid milk (Mawa) - 100 gram
Raisins (Kishmish) - 1 tbsp
Cashewnuts (Kaju) - 6 to 7
Salt (Namak) - less than ¼ tsp
Black pepper powder (Kali mirch powder) - 2 to 3 pinch
Ingredients required to prepare the gatta gravy.
Curd - 1 cup
Tomatoes - 2
Green chilly (Hari mirch) - 2
Ginger baton (Adrak) - 1 inch
Oil - 2 to 3 tbsp
Coriander leaves (Dhaniya) - 2 to 3 tbsp (Finely chopped)
Kasuri methi - 1 tbsp
Gram flour (Besan) - 1 tbsp
Red chilly powder (Lal mirch powder) - ¼ tsp
Coriander powder (Dhaniya powder) - 1 tsp
Turmeric powder (Haldi powder) - ¼ tsp
Asafetida (Hing) - 1 pinch
Cumin seeds (Jeera) - 1 /2 tsp
Salt (Namak) - 1 tsp or as per taste
Garam masala - ¼ tsp
To prepare the dish of gatta, first we’ll knead the dough.
Take gram flour in a bowl.
Add oil, curd, crushed carom seeds, salt and 1 pinch red chilli powder to it.
Mix everything well.
Mix it properly using your fingers this way.
Add water if it appears dry.
Knead the dough.
Our dough for the gatta is now ready.
We have used only 1 cup water to knead this much dough.
The dough should be a little soft in comparison to the dough of a poori.
Cover the dough and keep it aside for 15-20 minutes, the dough will set and rise.
Till the time our dough rises, let’s prepare the stuffing.
Take half mawa and leave the other half to be used later on for making the gravy.
Crumble the mawa with your hands.
Add salt, black pepper and coriander leaves to it.
Add raisins as well.
Cut the cashews into small pieces.
We are adding raisins and cashews to increase the taste, but you can even avoid adding it.
Mix everything properly.
Our stuffing for the gatta is now ready.
20 minutes are over and our dough is also ready.
Knead the dough a little more.
Knead the dough properly and make it smooth.
Break it into tiny balls having the size of a berry.
We have prepared 8 balls from this much dough.
Take each ball in your hand and press it till it becomes a flat oval. Bind the stuffing into a ball.
Fill the stuffing inside the flat oval.
Now close the dough ball such that the stuffing is enclosed fully inside.
Roll it in a ball this way.
Keep it on a plate.
Prepare all the gatte in similar way.
Put water on a flame and let it boil. Make sure the water is sufficient so that the gatta fits in easily.
Once the water starts to boil, add the gattas to it one by one.
Boil the gatta for 12-15 minutes.
Then we’ll prepare a gravy.
Our gatta is now ready.
Remove them from the stove.
Now let's prepare a gravy for the gatta.
Add oil to a pan.
Let it heat.
Once the oil is hot add cumin seeds and asafetida.
Once the cumin seeds are roasted, add turmeric powder and coriander powder.
Roast it a little.
Make a paste of tomato, green chilly and ginger. Add this paste to the pan.
Add kasuri methi as well and roast it a little.
Our masala is roasted as the oil floats on the top.
Now add gram flour.
Keep stirring and roast the masala for another 2-3 minutes.
Roast it for another 2 minutes.
Crumble the mawa.
Add it to the pan and roast it for another 2 minutes.
Add red chilly powder to the masala.
Mix thoroughly.
Our masala is now roasted.
We get a good fragrance from it.
Add curd and stir well.
Roast it on high flame so that the masala is roasted quickly.
Traditional gravy is made using mawa and curd, but we have added tomatoes as well.
You can prepare the gravy as per your choice.
Stir well till the gravy starts to boil, otherwise the curd will burst.
The masala is now ready.
The water that is present in the gatta, add it to the gravy.
There is no need of adding any extra water to it.
Mix continuously.
Once the gravy boils, add salt, garam masala and green coriander leaves. Mix well.
Our gravy is now ready.
Add the gatta to this gravy
Cover the dish and let it cook on low flame for 5 minutes so that all the spices mix well.
5 minutes are over and our sabzi is now ready.
Turn off the flame.
Serve the dish in a bowl.
The dish of govind gatta is now ready.
