(Thomas) I am downtown Paris to meet Patrick at WineByOne
to test that wine bar that only tends wine by the glass
So what is it all about WineByOne, well let's check it out !
On the spot
(Patrick tries an Austrian white wine at 1,90 €)
(The wine is perfect)
Let's try a Pauillac, Réserve de la Comtesse. Here we go.
Slide the card in, place your glass
A glass of 3cl will make it
Let's wait for the last drop ! (mmm. too warm)
(Thomas) What do people look for in this bar ?
(Stéphane Girard, the owner) Well I think they come to look for discovering new things
We have a hundred+ wines available at a time, quite a large choice
Wines from all over the world hence that feeling of discovering
people knowing very well French wines, or just Bordeaux or Burgundy, but not familiar with other regional wines people knowing very well French wines, or just Bordeaux or Burgundy, but not familiar with other regional wines people knowing very well French wines, or just Bordeaux or Burgundy, but not familiar with other regional wines
And more, people unaware of foreign wines, and here we have the chance to have
a variety of wines available by the glass (100 references)
For all tastes and at all prices. By allowing each and everyone to pour oneself a glass
of the wine she feels like, or she has liked
people are sort of satisfied because they can build their own knowledge by tehmselves people are sort of satisfied because they can build their own knowledge by themselves people are sort of satisfied because they can build their own knowledge by themselves
I have also discovered that many people are still intimidated by the wine
and true, when these people are in front of a sommelier or a wine "expert"
they may feel uncomfortable. These people come in, and we 're here to
help a bit, of course people are still in demand of information. Look here, you can get information or advice here
touch screens, to help you select the wine
(Thomas) Such a system exists in New York. (Stéphane) More and more
(Thomas) Such a system exists in New York. (Stéphane) More and more
you may get even more information than expected
A sommelier may not remember all information of a wine menu. Hence people are sort of happy to be autonomous
to be able to help oneself and get the information
without being scrutiized by someone else. Connoisseurs of course
are like children in a sweet store because when they see the kind of wines we cater
(Thomas) Do people drink moderately or heavily ? :) (Stéphane) Non no moderately
Everyone drinks moderately with low content per serving (3cl, 6cl, 12cl)
We are in a qualitative mode...And...
qualitative consumption, from a clientele not accustomed
to attend wine tasting. But there is also a clientele
younger, feminine
(Interesting) and probably less knowledgeable than the clientele of traditional wine bars.
does not really go to wine bars or wine shops because they may feel intimidated by the bartender or the clerk
So here people are really autonomous both in getting the wine and the information associated
bring in more satisfaction. And there's nothing more fun than discovering that
even though you do not know much about wine, well at the end of the day
one is capable whatever its knowledge to tell the good from the bad, what one likes or not
Thus wine is not that complicated ! And it's just a matter of pleasure and enjoying it.
