Hey guys, in this video I will show the results of testing baking soda as an alternative to
edible potash or Akanwu or kanwa or kaun or keun.
This ingredient has so many names.
One of the uses of edible potash in Nigerian cooking is to make palm oil curdle and in
this video we will be testing using baking soda for that purpose.
So here Iím mixing the powdered edible potash with a small amount of water.
And here Iím mixing 2 teaspoons of baking soda with about the same quantity of water.
I find that with baking soda, you need a little bit more for the same quantity of water.
And by the way, baking soda is also known as bicarbonate of soda or sodium bicarbonate.
They are all the same.
So thatís palm oil. We add the potash solution and stir at the same time till it curdles
and turns yellow.
We do the same with the baking soda solution.
You can wait till the baking soda has completely dissolved but it doesnít really make any
difference.
One thing is that you have to put it in water first before adding it to the palm oil.
You can see that they are exactly the same.
They taste the same and virtually no difference.
So for all those asking me what they can use as alternative to potash when making Abacha,
Isi ewu or Nkwobi, you can use baking soda.
