Gemma's Bigger Bolder Baking Frozen Yogurt Bark
Hi Bold Baker! I get a lot of requests to show you how to make easy, wholesome snacks.
So this week, thanks to Yoplait Yogurt I'm able to bring you a BONUS video showing you
how to make three different flavors of Frozen Yogurt Bark. They're easy to make, they just
take a few ingredients and it is a great snack for kids and adults alike. So let's get started!
So what is Frozen Yogurt Bark? It is a frozen yogurt treat that you can customize using
any of your favorite flavors. I have three great flavors that I love that I'm going to
share with you today. Our first one up is Raspberry & Pistachio.
In my bowl, I'm going to add in my Yoplait Greek Vanilla Yogurt. This is our base and
you can add whatever your heart desires to it I'm going to add some chopped pistachios.
I roughly chop my pistachios so you have different sizes for nice texture.
To this I'm going to add a little bit of honey. Now feel free to use agave or any kind of
sweetener that you like.
Also, because I'm using a vanilla yogurt, I don't need to add too much honey.
To this lovely mix, I'm going to add some fresh raspberries. Just loosely mix this guy
and then I'm going to add in one more important ingredient. To finish off this Raspberry bark,
I'm going to add in some raspberry puree. So give it a light little swirl around. We
don't want to mix it all together because we want to keep all those lovely ripples intact.
Also, when you freeze something the flavor gets even more concentrated so this is going
to be lovely once it's frozen.
Now all you need to freeze your bark is a small baking tray lined with parchment paper.
Pour your yogurt mix straight into your tray. Make sure not to include any bits in the bowl.
And then just spread it out with a spatula. You'll notice it kind of just spreads itself
out so you don't have to worry too much.
And then of course, to make it extra Big & Bold, we're going to top it off with some more chopped
pistachios and fresh raspberries on top.
And there you have it, our lovely wholesome snack. This looks fantastic. That color is
so vibrant. So we're going to pop this guy in the freezer for around 4 hours or so and
wait until it's frozen.
It's been four hours and I'm pretty sure our bark is frozen. This bark looks really good.
I love how you can see the ripples of the puree on the top. Ok. I'm going to chop it
up into bite-sized pieces.
I'm going to try some. Oh, my gosh. This tastes so good. The pistachios are lovely and creamy,
the raspberry is really sweet, and the yogurt is really fresh. This is such a beautiful
combination of flavors.
Ok, I'm going to pop this guy into the freezer before he starts to melt and we're going to
move on to our next flavor.
Our next flavor of bark is a rich and smooth Chocolate, Banana and Hazelnut.
Just like your first bark, add your yogurt into your bowl. To this, I'm going to add
a little bit of honey.
Next up we're going to add another of my favorite ingredients which is cocoa powder. Now you'll
notice I did not say Hot Chocolate powder. I said cocoa powder. Use unsweetened good
quality cocoa powder for this.
Now just give these two ingredients a mix to make it nice and smooth. Okie dokey. You'll
notice the yogurt gets really thick because of the cocoa powder. Now I really suggest
you give this a little try because it's like almost an easy chocolate mousse with a little
bit of a tang. It's really good.
Oh. It tastes like dessert. Oh. Yummy. Oh. Yummy. yummy. yummy.
Ok, before I eat all of this I'm going to add in my bananas. Banana and Chocolate go
so well together because you get that little bit of sweet and little bit of creamy. Our
next ingredient to add to the bark is toasted hazelnuts.
And just like the pistachios, make sure you toast your hazelnuts and when you do, if you
ever have a problem getting off the skin, when they're fresh out of the oven and warm.
Just rub the skin off with your fingers. Just like that.
Add your chopped hazelnuts in and just mix it all together. It does not get much simpler
than this. Once it's mixed, just pour it into your lined baking tray. Just spread it out
as thick or as thin as you like. I like mine a little bit in between.
And then as always, we're going to decorate the top to make it look nice. And I'm going
to scatter some hazelnuts on top as well.
Now if you don't like hazelnuts, like I said at the start, it's all customizable. Add in
almonds, leave out the nuts, do whatever you want.
Now how easy is that to make? Snacks need to be convenient. Convenient to make and convenient
to grab. Otherwise, you're going to grab the wrong thing. So definitely make some of this,
have a stash in the freezer and you're good to go.
Our chocolate bark is frozen and it's ready to be cut. Feel free to cut it any shape you
like. It is for you to snack on after all.
You want to keep your bark frozen at all times. Just take it out to cut it. Because you don't
want it to melt on you.
This Chocolate Bark is smooth. It's decedent. It almost tastes too good to be a snack.
Although I do love chocolate, I'm very excited to show you this next flavor.
Our next frozen bark flavor is something I've literally been going nuts for lately and that
is Peanut Butter & Jelly.
Add your yogurt into your bowl. To your yogurt, I'm going to whisk in my peanut butter. Now
I like to use smooth peanut butter but you can use chunky if you like. Whisk these two
ingredients together until they're nice and smooth.
It helps if your peanut butter is room temperature, nice and soft.
To the peanut butter mix, I'm going to add in some chopped strawberries, some chopped
toasted peanuts. Feel free to use salted or unsalted. And we're going to add in our very
important strawberry jam, which brings a lovely sweetness to this. Then we're just going to
gently fold all of the ingredients together remembering to keep the ripples of jam intact.
Okie dokey. This is ready for our tray. Once it's in your tray, spread out your lovely
thick bark. You'll start to see the strawberries poke through. Just for added effect, I'm going
to add on some more peanut butter and raspberry jam on top and then swirl it around. And I'm
going to scatter more toasted peanuts on top.
Another beautiful bark done. Look at how gorgeous that color is. We're going to pop this guy
in the freezer and we'll be eating him in no time.
I love the Peanut Butter and Jelly Bark because it's smooth and creamy and also salty and
sweet and I love those two things together.
Get really creative with your frozen yogurt bark and add in any flavors you like. The
combinations are endless.
