Erin: Hi, my name's Erin O'Shea I'm the
executive chef and part-owner and Percy Street Barbeque
here in Philadelphia on South Street.
And today we're gonna make some scallion
and cheddar corn bread.
Very easy to make at home.
...and anywhere...on the road...
Okay so you're gonna basically have 2 different bowls
1 with your wet, 1 with your dry ingredients.
We're gonna start by melting this butter so that it's ready
for us when we need it.
We're gonna go: cornmeal, AP flour, a little bit of baking powder
a little bit of salt and sugar
so I'm gonna whisk these dry ingredients so they're all
incorporated and we're gonna move onto the wet ingredients.
Buttermilk with a couple whole eggs and here
is the tricky part..getting corn syrup out of a
ramekin...
so i'm gonna whisk this stuff together just like I did with my dry
and we're gonna take the wet add it to the dry
It's so easy, really, the most time that
it takes is just to measure everything out.
And you can flavor it with whatever you like, I love scallions
I also love jalapeƱo and cheddar.
I guess it really depends on what the rest of your meal is.
Once this butter calms down a little bit
we're gonna slowly add it to the batter.
You wanna be a little careful with this cause it will splash up.
So we're just gonna add a little bit at a time
and get this butter incorporated.
One more..
So this is the consistency you're looking for...
kinda like pancakes.
And at this point you can really add whatever
you want to it to flavor it.
I'm gonna do some fresh scallions.
When I use cheese I usually cube it up just
because I like the consistency of that when
I'm eating the cornbread as opposed to a
shredded, so if I'm gonna do cubes
I'm gonna add it to the actually pan that I'm
using to cook it off in.
I've got really cute little cast irons here..just put a little
batter in here, almost to the top.
It's gonna rise a little, but mostly in the center.
And i'm just gonna throw in as much cheese as I want..
which is a lot!
..cause I like cheese.
And I'm gonna use my spatula to just kinda
dab it down in there and cover them up
with the batter and they're good.
So I'm gonna put this in the oven for about 15 minutes, 350 degrees..
Okay!
So here we go, this is our scallion and cheddar
corn bread and if you could smell that, you'd be really happy!
