Now it's time to plate up our first omelette. What we'll do is add a couple scoops of beef.
What we're going to do is just lay it flat on the plate for now, like so. We're going
to add out lettuce,
fold it over. You want it half open; you want to show off the lettuce. Now we're going to
top it with a little bit of sour cream, like so. We'll try to make it stay on top. We have
our peppers, and our green onions. That's number one. This is our first of three Spanish
omelettes. We'll come back to this later, and have a taste.
