What time is it? It is DJ BBQ O' Clock. And this week we're doing some tasty Horse
D'oeuvers. What? The H is silent? Hor D'oeuvers?! What is that?! Like French or something?
Alright, so this week we're doing some beautiful chicken strips. Wrap them in bacon and paint
them with some maple syrup and some Piri Piri man. It's gonna be awesome! Let's do this! Ooowwwwww!
So, here's our chicken. We've just got some chicken
breast strips and they're gonna go in said marinating pot. Get in there man, you guys
are making me look stupid! My good friends at Craft Beer channel, they've made me this
beautiful bottle of Black Mountain. And in it goes. Aww man, that chicken loves beer.

Can't say beer, almost said bear. Meant to say beer!
Now we got the beer in, nows the turn of garlic which they're already smashed and bashed and
chopped up. So garlic, join our bottle of Black Mountain and our chicken breast strips.
Good garlic! Now we're gonna add a bit of heat. So we're
gonna add a couple pinches of chilli powder. So, I might go three pinches. I'm getting
crazy. Now if you don't want that kind of heat you
can just go maybe some smoked paprika or just experiment you know. Have fun with flavours.
Maybe some ginger, or some coriander. Have fun, experiment! I'm gonna kick your ***!
Probably not, because that guys probably really huge because big men drive trucks.
Okay, so, there they are. And then we're gonna put the cover on and let it marinade for a
couple of hours. I like to let my marinades go overnight. And that way I get all those
beautiful flavours you know, imbued, embedded, rocking in the meat.
And now boys and girls, I'm gonna be really patronising. Here's a marinade I did yesterday.
What is this, Blue Peter man?! Ok here's one I made last night so the flavours
are gonna be really rocking in this bad boy. So let's move you Mr Olive Oil. And I'm gonna
pull all the chicken strips, put them on some paper towels so that they dry off.
Let's do some meat surgery. This is very, very important. Ok, I've got these toothpicks.
I've been soaking these for about a good couple of hour's man because what happens is, they're
made of wood and wood burns. So you wanna soak them so they don't burn up when they're
holding everything together, OK? It's important. So, we get our chicken strips. Throw a couple
of them bad boys down. Then we got the bacon. So now, we get to wrap the bacon around the
chicken like that. And there's the last chicken strip wrapped
in bacon! Ok, so now we gotta hold these things together
so we're gonna use our soaked tooth picks. There we go! So it's hitting all that goodness.
Getting the meat through there, the stick, so it's all staying solid.
So now we do the same for all these bad boys with my trusty, soaked toothpicks.
Skewers in, now let's get them on the grill. Alright, you guys ready man, for some heat?!
You ready? Heats gonna get you! So we're gonna go indirect side, indirect action, indirect
heat because I wanna get some extra layers of flavour on these things.
Oh yeah!
I also wanna get some nice wood smoke flavour on these so I've had some mesquite
wood soaking for about an hour. It's gonna give this a nice wood smoke flavour. Alright,
so I'm gonna give these guys an extra layer of flavour. Half of these I'm gonna throw
some Maple Syrup. But I'm not gonna do it right now because sugar can burn. with the other
half, I'm gonna put on some Piri Piri sauce. Now if you wanna know how to make these just

The chicken strips have had a couple of minutes
and now it's time to add some more Piri Piri sauce and start adding the Maple Syrup.
So we're gonna flip these guys. Some more Piri Piri sauce. There we go. Now let's add
some Maple Syrup to our other Hors D'ouevers.
Yeah!
So we're just gonna keep slathering these guys with flavour. Maple Syrup are on a bunch
of them and Piri Piri on the others ones. And then our friend over here, we're just
gonna let the Black Mountain beer marinade speak for itself.
Ok, so our chickens been on there for about 15 minutes and I've been hitting it with loads
of flavour and these guys are done. So I've got a clean pair on tongs and a clean
wood board. It's time to plate up.
We're gonna put the Piri Piri ones over here.
And then the sweet Maple Syrup dudes over here.
And then you my friend, you, are gonna be our first guy we taste. You didn't get anything
but that Black Mountain IPA marinade. Enough cooking, enough talking, it's now time
to eat. So juicy. That is awesome! That's the best starter! Beginning of your
party man right there. That's how you get a party started!
