Campylobacter. Sometimes the full name will be Campylobacter jejuni. It’s a bacterial
food pathogen that is commonly associated with poultry, sometimes with unpasteurized
milk, and it causes a fairly severe form of food poisoning: diarrhea, vomiting, fever.
What separates campylobacter from what people have in their mind as food poisoning is: A)
the severity but B) the risk of developing Guillain-Barré syndrome, referred to also
as GBS, which is a syndrome where the immune system attacks the peripheral nerve system
and causes widespread paralysis to the point where it can be fatal and it can also leave
people with very severe, long term full blown paralysis or partial paralysis.
