Welcome back to keep calm and bake. My name is Caroline Mili Artiss and today I am going
to teach you how to make a malteaser cake. I had to pause then because I am such a big
fan of malteasers. [music]
I am going to put the malteasers far away from me for now. We just need those at the
end. We are going to start by making the chocolate sponge cake. So I have some unsalted soft
butter. It is at room temperature. Put that in. I am using golden caster sugar, another
220 grams. I am just going to beat these together until it is light and fluffy first.
Now you can add your eggs, one at a time. So I have got four eggs. Crack it in. Make
sure no shell goes in, and then we are going to beat it until it is all mixed together
and then add the next one.
Another tip, it actually always helps to have your eggs and your butter and everything at
room temperature before you start baking.
I am going to sift the cocoa powder, flour. So I have got self raising flour, cocoa powder,
and a teaspoon of baking powder. Sift these all on top of your mixture. I am going to
put this in to mix. Start if off slowly. We are going to blend everything together. Now
I am going to add a teaspoon of vanilla. Vanilla extract this is. This is a really good one.
Lovely, healthy teaspoon there, and I am also going to add a couple of tablespoons of sour
cream.
Now we can beat this all together.
OK, that is ready. So do not forget. If you want the full recipe and all of the quantities,
then look in the description box because it is written there for you. I am going to pop
the mixture into my pre lined baking tins. So this is just lined with some grease proof
paper. Even them out in both tins. This mixture is looking lovely and thick and it is going
to basically make the perfect chocolaty sponge mixture base for your malteaser cake. I am
going to smooth out the sponge mixture. Just kind of gently push it so that it goes around
to all of the sides. You need a nice preheated oven. I am going to bake this at 180 degrees
Celsius. That is 350 degrees Fahrenheit, gas mark four. This is now ready to go into the
oven to bake. I have got my cakes cooling to one side and now I can start making the
icing. I do have some dark chocolate which I am just melting down over here. I have got
some soft butter, unsalted, about 200 grams. It is going into my mixer again. Now I am
going to sieve in my icing sugar.
It is quite a lot and also I do sieve this icing sugar because otherwise it can go a
bit lumpy when you are making it. Alright, I am going to start by mixing this lot together.
I always do it in stages because otherwise it goes everywhere, and a little trick, get
yourself a tea cloth because this is a large amount of icing sugar. I am just going to
cover to blender a little bit. Just put that on slow. All good. Now that is all smooth
so I can add the rest of the icing sugar.
So the next half going in.
Right, that is done. To this, I am actually going to add also a tablespoon of cocoa powder.
There we go. Once the chocolate has melted this is going to make such a good, rich icing.
Now we are going to mix this together and beat it until it becomes lovely and smooth
and chocolaty.
Add about a tablespoon of milk. There we go. Now we are ready to ice and decorate this

recipes. OK, now, first up, a bit of icing in the middle. We are going to sandwich this
together. This is good. Now we smooth that down. Make sure that you get all the way to

are going to put the rest of the icing all over this. Let us cover this up. This is the
fun bit. Now you do have to make sure that your cake is properly cooled down before you
start icing. Otherwise the icing is going to melt basically when you put it on, OK?
I like to just basically dollop it all on top and then we basically spread it around
the sides. Now just make sure that you get a nice layer. Make sure that you do the icing
all around the sides. We are going to completely cover this cake. Alright, now for the exciting
part. We have still got them. I did not eat them all, guys, our bowl of malteasers. You
are going to need quite a lot because basically we are just going to cover the whole thing,
OK? Just get started really. We might be here for a little while. Sing a song. No, I won't
sing a song. I am just going to cover this whole cake in malteasers, and it is good to
have a nice thick layer of icing because then they can snuggle in there a little bit more,
