The crisps are going to
add a wonderful savoriness to our salad. For this salad,
we need to remove the tough stem from the kale, and for curly kale
the easiest way to do this is to simply
pull the leaves off. To chop the kale,
place a few leaves on a cutting board, hold them
tightly, and now thinly slice them. Then chop them.
Kale leaves are quite hardy,
and they can be hard to chew on, but chopping them like this
is going to make them much more tender.
This looks perfect. Place the kale in a large bowl,
add the mushrooms, and toss well.
The reason for doing this
before we add the vinaigrette is that the oil residue
on the mushrooms coats the kale leaves.
Now drizzle with the vinaigrette, and toss again
until the kale leaves are well coated with the vinaigrette.
You can serve the salad either
in individual bowls, or in a large platter and serve it family style.
It's a super-easy salad to put together.
And now garnish with the parmesan sesame crisps,
which you can break with your fingers.
