Today I teach hand made noodles
250 grams sieved flour add 1/3 tsp salt and stir
add 140 ml water and stir
knead for 5 minutes add water if too dry or flour if too wet
after kneading for 5 minutes it looks like this
sprinkle half tsp oil in the bowl and toss the dough in it
cover up for 30 minutes
wash and cut some Bok Choy
cut 300 gram lean pork in thin slices
now cut it in strips
marinade the meat with 1 tbsp light soy sauce
1 tbsp rum, a pinch of sugar, 1 tbsp water and stir
add 1 tsp corn starch and stir again
add 1 tbsp oil, stir and put in fridge for 30 minutes
take dough out of bowl after 30 minutes
sprinkle some flour on table, knead dough for 3 minutes
divide in 2 parts after kneading for 3 minutes
put half back in the bowl and cover it up
sprinkle flour on table and press flat with fingers
use a rolling pin and flatten it until it is as thick as a chopstick
use a knife to cut of strips
hold a noodle with 3 fingers of each hand and softly pull it
after pulling it, softly swing and hang it up
repeat this process with other noodles, softly pull
swing in order to lengthen and hang on the rolling pin
again: pull, swing and hang it up
put noodles in boiling water
softly stir, cover with lid and boil it up
turn to lowest heat when it boils, cover with lid and cook for 1 minute
after the minute put the noodles in some cold water
let it rest for another minute
heat up a pan and add 3 tbsp oil
add the pork strips in
fry until nearly done
put aside when nearly done
add 1 tbsp oil and the white parts of the Bok Choy
add the leaves
add 1 tbsp chicken essence
a pinch of pepper and keep frying
I take some out for the soup noodles later
add the noodles in
fry until it becomes dryer
add 1 tsp dark soy sauce and 1 tsp light soy sauce
taste and season if you like, then turn off the heat
add some sesame oil
shanghai style fried noodles are ready to serve
take out other half of dough
press with fingers again, we will make thin soup noodles
use a rolling pin to flatten it
roll into a thin rectangle
cut of strips with a knife
softly pull it
same procedure with the next one
softly pull the other noodles the same way
add the noodles into boiling water
use chopsticks to softly stir so they wont stick together
cover with lid and boil it up
turn down heat when water boils, cover and cook for 1 minute
after 1 minute put the noodles in cold water
stir a bit and wait 1 minute
warm over the meat and vegetables in the pan
add some light soy sauce
turn off heat
now we make a basic japanese soup stock
1 tsp japanese fish powder (Dashi), 1 tbsp light soy sauce
some sesame oil
some of the water from cooking the noodles
add the noodles in
stir it
eventually add some more water
add the meat and vegetables on top
the soup noodles are ready to serve
these are shanghai style fried noodles
these are soup noodles in a japanese soup stock
