I'm Bill Lumsden and i'd like to tell you a little bit about Cask C.
I was quite familiar with using Oloroso and Pedro Ximenez sherry casks to mature
some of my whiskys in, but Cask C has actually contained one of the more
unusual styles of sherry, and this in fact has contained Manzanilla. It's
got this lovely, lovely, dark and intense mahogany brown colour.
Oh wow. That's so big flavour. It's got a real pepperiness in the palate. It's got all
these dried fruits from the sherry, but it's got this lovely saltiness in there as well.
So what sort of person would be likely to choose Cask C?
Well I think it'd be someone who likes their whisky big, gutsy, and full-bodied.
