And there, my OYAKO-DON is ready.

Hello, there. I'm Mie SHIRAISHI.
Today, I'm going to make "OYAKO-DON".
"DON" means a dish in which a main dish is put in the bowl,
one of a traditional Japanese fast-food,
and easy to make.
In Japan, there is a wide variety of "DON" food.
Today, I'm going to make "OYAKO-DON" the most popular "DON" for Japanese people.
Ingredients are as fellows;
Chicken thigh, Egg, Onion,
Dried shiitake mushroom, Dried shiitake broth (soaked in water),
Soy sauce, sugar, SAKE,
AKAZAKE. If no AKAZAKE, use MIRIN.
And MITSUBA herb.
Let's get started.
First, cut the Chicken thigh.
Put the skin side down. In doing so, you can cut it nonslip.
Cut the chicken into bite-size pieces.
First, cut like this.
Next, cut by Sogi-Giri long, (thin diagonal cuts)
In cutting by Sogi-Giri long, (thin diagonal cuts), the chicken gets light crunchy texture.
Here, it's done.
Next, cook the chicken.
Use a shallow pan.
Add the dried shiitake broth.
The soy sauce
The sugar.
The SAKE (Rice wine).
The AKAZAKE cooking rice wine.
Add all the seasoning.
Turn on gas.
heat the liquid to boiling.
It has boiled.
Simmer the boiled liquid for a while.
Next, add the rest of ingredients.
Add the chicken.
The sliced onion.
The Rehydrated shiitake mushroom (sliced).
Simmer again until the chicken and the onion are cooked.
When it has come to a boil, remove the *** from the surface of the liquid.
3 minute has passed.
The chicken and the onion are cooked just right.
Next, add the egg.
Before adding the egg, add the stalk of the MITUBA harb first.
Reduce the heat.
Beat the egg.
Beat lightly, add the egg white first, save the egg yolk.
Simmer lightly.
And then, add the remaining egg yolk.
And, add the top of MITSUBA herb.
Turn off the heat.
Close the lid.
Continue steaming with the remaining heat for a while.
When the egg is hot, put on hot cooked rice in a bowl.
Many Japanese people likes half-heated egg.
But non-Japanese people usually likes hard-boiled egg, I guess.

Put on the hot cooked rice.
Finally, arrange the MITSUBA leaf on the top.
Simple and delicious OYAKO-DON is ready.
