CLANCY ROSE: So you take your tamper and you can set down the porta filter and tamp the
espresso into the basket. The way I like to do it is in two motions. And the first one
is you kind of set the tamper in there, which creates a flat, level surface, and then take
it out and lightly tap the basket on the outside, which is going to knock all the coffee around
from the outside ring into the basket, and then, once again, set it down in there and
actually tamp this time which is just about 30 pounds of pressure and at the end, just
spin the tamper, which cleans up the whole puck. One of the things that you might be
saying at home is: How am I supposed to know where 30 pounds of pressure is? And the best
way that I know to find that out is you can go and buy tampers that are just like this
one but it is called a click tamper. And just like a torque wrench or something, it will
give way at 30 pounds, so you can kind of train yourself to know that. I am going to
once again kind of clean up the porta filter, all this excess coffee around. And that is
a coffee puck ready to insert into the machine and brew your espresso for your cappuccino.
