Hi everybody,
Today I want to talk to you about eating your fruits and vegetables.
So you know you need to eat fruits and vegetables and some of you probably do a
great job at it but there are others who
maybe need to add a little produce to your diet.
I want you to know that even if you are not eating a lot you can learn you can change that
by making small
improvements - maybe you are doing that already in your behavior change.
Also, I want to know that your taste buds CAN change.
So as a kid, I hated vegetables. I'd eat an ice berg salad.
I ate potatoes, but I didn't really care for a lot of other vegetables. In
fact, I have an older brother and was sitting at the table one time with him
and I had to site there until I ate my vegetables. He said if
I paid him he would eat my vegetables for me. Well,
the longer I wait until I said "OK, I'll make the deal with you",
the higher the price went up so. So generally, I would force the vegetables down.
I would take a bite of vegetables,
drink a glass of CoolAid, eat a bite of vegetables, drink a bit of CoolAid.
Then, as the years went on and I got into college
I was at a pot-luck party one time. I was eating some spaghetti
and I thought it was really good. I just thought it was spaghetti with meat sauce.
And someone said it was broccoli. Wow! I liked this!
So a little light went off - a lightbulb went off and I thought wow I can start
sneaking vegetables
in my diet because I knew I needed to eat them. So that's what I started doing.
Putting them in soups, beans, sneaking them in sandwiches, and
eating a little more variety in salads.
Over the years I've come to like vegetables but I still
need to put more in my diet and I'm very cognizant of that.
I strive every day to have a lot of vegetables and I'll so what you think
about what you can do
if you need to increase your vegetable consumption. Generally, we are supposed
to have about two servings of fruit a day
and three servings of vegetables but you'll see from doing your nutrition
project maybe you need a little bit different.
You can eat more vegetables than that a day. If you are - good for you! You can eat
many servings of vegetables a day and extra servings of fruit,
especially if you are an active person and if
you're not consuming them by juice but whole fruits or whole vegetables.
And I wanted to let you know a few of the things I do.
One is - I bring a salad or other vegetable to work every day
because I'm captive audience there. I'm hungry and need lunch and whatever I bring
I will eat.
So, I eat a good salad.
Something else I do: I started getting a
produce box every week. For me, it's like Christmas every week because I
don't know what's going to come in it.
I wanted to share with you the produce box I got this week.
Produce boxes are generally organic
and it's locally grown food. I've been wanting to
buy food regularly that's organic from the Farmers Markets which are generally
organic.
I just don't have time. I do a lot of cycling and swimming on the weekends and
I'm pretty busy in the middle of the week to
to find the farmers market to go to. I make it sometimes but not often enough.
So this Farmer's Market Box is a great great
way from me to provide some funding to local farmers,
for me to eat more produce, and so these boxes cost $20 dollars a week.
There are different companies that do this - I am not really here to promote a
certain company but there is one out there that
I really like. I've heard they are good because a you get a nice variety.
So let me pick up my box and share with you what I received recently.
OK.
So, I got spinach. Great! They always put some type
of lettuce in there. I got a couple apples this week.
I got a spaghetti squash. These are great - sometimes they are a little bit bigger than this.
You slice them. You cook them. And then you take out the insides and it's kind of like
spaghetti.
You can put some marinara on them.
Last week I got a bunch of peppers and there was even purple bell peppers. Loved it.
This week I got some pears. Very cool, pears.
And jicama. Not sure if it was last week or this week, but I received some jicama.
Sometimes I get a little behind. It takes me a week or two to eat things.
I had a couple of onions this week. They always put some type of different onion in there.
Shallots, white onions,
chives.
Asparagus, yeah!
These are purple potatoes. Every week there's potatoes or carrots in there. I just boil
them, add some chives - they are great!
Radishes from this week or last week and these are already washed.
This was my favorite this week. I was so excited to see this.
This is - I believe it is called a dragon fruit. I've never had this.
I want to buy one recently but they are a little bit expensive. In this box
they are the perfect fruit for me to try. So I am really excited and I'm going to try it tonight.
I'm curious what you did to fit in more fruits and
vegetables in your diet.
