Hi, I am Eugenie.
I love Italy. Italian food is so good, isn't it?
Today I am going to make Italian cookies, Amaretti.
It's very easy to make.
For this recipe, you will need:
1 egg white,
75g of caster sugar (1/3 cup),
85g of ground almonds (4/5 cup + 1 tablespoon),
1/4 teaspoon of almond extract, and
a pinch of salt.
In a mixing bowl, add in an egg white and beat it until doubled.
It doesn't have to be firm.
OK.
Then, add in the sugar and whisk just until combined.
And fold in ground almonds
cutting the batter carefully with a spatula.
Now add in almond extract and salt.
And keep folding to combine.
Make small balls with hands
and place the cookies on the parchment paper.
And dust them with confectioner's sugar.
Bake for 10 minutes or until golden brown.
Amaretti,
The texture is like French macaron
because ground almonds and egg white.
It's very chewy.
But the flavor is totally different, of course.
The dominating flavor is almond extract.
I love it so much,
so I double the portion when I make amaretti for myself.
