One of the great things about Missouri is that there are wonderful foods growing wild all around us.
For example, this is lamb's quarters.
It makes a good substitute for lettuce or spinach, and can be gathered from April to November.
Today, we'll show you how to use it for a terrific quiche.
You'll need 4 cups of chopped lamb's quarters.
Make sure you gather new leaves. In a skillet, saute onions until tender.
Add lamb's quarters, cooking and stirring until it's wilted.
Cover and remove the pan from the heat.
In a mixing bowl, beat eggs and milk, then stir in salt, pepper,
1 cup of cheddar cheese
and the lamb's quarters mixture.
Pour that into a pie shell and sprinkle with another cup of cheddar cheese.
Bake at 400 degrees for 10 minutes, then reduce the heat to 350
and bake 30 minutes longer...or until a knife
inserted near the center comes out clean.
Let the quiche stand 5 to 10 minutes before cutting it.
I think quiche makes a perfect light, one-dish meal...
and it's even better when it's home grown!
