CLANCY ROSE: So, what I'm going to get into next is steaming the milk for your single
macchiato. I'm going to pour the milk into the steaming pitcher here. You don't need
much milk. A single macchiato is a 3-ounce beverage and you have 1 ounce of espresso
so you only need 2 ounces of milk, but the smallest amount that we're going to be able
to steam in this sized pitcher is about that much. So what I'm going to do is drop the
steam wand down under the surface of the milk and after I turn it on, there's three processes
of steaming the milk and first turn it on and get it swirling and you get it spinning
around in a circle. You keep it spinning until it kind of matches the temperature of you
hand or it's just about 100 degrees. It's right where you feel the milk start to warm
up. Once it does that, you drop it down so that the temp of the steam wand is just above
the surface of the milk and you're going to hear the air start being introduced into the
milk, and that's how you make the foam, and this is a small drink, so we don't need to
make a [INDISCERNIBLE] foam for this one and then the third process is you're going to
submerge the tip of the steam wand back under the surface of the milk and get your milk
spinning again and you keep it spinning until it's at the right temperature.
