Burrata Cheese, with grilled Papika and a sugo from
melted tomatoes
and how you make this dish..
I will show you in this Episode of "BBQ aus Rheinhessen"

here are the ingridients we will need.
we start with 3 red paprika
this is the star of the evening..
this is Burrata Cheese
Buttara is a italian cream-chesse and is part of the Filata-Family
so it´s like
Mozzarrella
i got it the burrata from an italian food shop
but if you can´t get it... just go with the mozzarrella
burrata is really creamy inside...
and really really delicious..
2 sharlots, 2 gloves of garlic
some cocktail tomatoes, Olive Oil, Salt
some sugar
a pan
a bowl and really important..
sealing foil
a little basil
the coals are heating up... so let´s move to the grill
my chimney starter is ready
now place the paprika directly on the coals
the paprikaskin will get burned
it´s meant to get black
later you can easily remove the skin
now the paprika are really burned..
now take the bowl
and place them in the bowl
and then apply the sealing foil
let it rest for 15 Minutes
then you can remove the skin easy.
now dice the Sharlots
and the Gerlic
and then we set a pan on our Grill
add 4 Tablespoons
of Olive Oil
now add the cocktail tomatoes
now let them cook in the hot pan
for about 4 minutes. Mabybe you grab a knife and score the tomatoes
so they will not explode when getting hot.
after 3 Minutes you add the Sharlots and Garlic
and let them geht soft..
another 3 Minutes later everything is sauted
now season with some salt
and a tablespoon
of sugar
now pull the pan to a indirect zone on your Grill
i fortgot to show you this... you will also need some Tomato Juice
add 100 ml of Tomato Juice
now leave the pan on the indirect zone with lid closed
so the sauce can reduce
now we move over to the table
now free our paprika from the bowl
it´s time to get the skin off.
they are still hot
still steaming
and now
you can scrape the skin off easy
no need for pressure.. just scrape it off
here are our skinless paprika
and now
cut the paprika into stripes
a awesome sweet smell.. i love roasted paprika
ok the paprike has it´s
final shape...
nice filets without skin
got my plate ready..
the sauce is ready too.
take the pan from the Grill
here are our melted Tomatoes
and i just add some spoons of the sauce
on the paprika
now i grab some basil leafes
just break them.. so the
flavour can combine with the melted Tomatoes
and now...
here is the burrata cheese
it´s a nice package..
it´s like christmas... another package in the package :)
finally.there
is the burrata cheese...
it´s cheese package.. with the creamy cheese in it
now cut into the burrata
Take a look..
there is the cream cheese
inside
liquid, cream chesse
now add a nice slice
on our dish
little bit of olive oil
and here we go!
