Okay! So, are you ready to make some Hollandaise sauce? Yeah! (Excellent!)
So we just take a regular sauce pan And first weˇre going to use 2 tablespoons
of vegan butter We just want that to melt
And once thatˇs all melted, weˇre going to add 3/4 cup of unsweetened soymilk
thatˇs really important to remember Donˇt get plain, because plain still has
sugar; it has to say ¨unsweetened〃 or youˇll end up with very strange sauce
And Iˇm going to let you stir that for me once I pour this in
Just slowly You just want to bring this part of our sauce
to sort of a steam; we donˇt want it to boil Now once we added that, weˇre going to add
some seasoned salt And again, youˇre going to salt to taste
A pinch of cayenne If you want it a little spicy you can do a
little more Just a little bit of turmeric
And turmeric is just to give it a little bit of yellow color that it normally has when
itˇs made traditionally Now while sheˇs doing that, Iˇm going to
go ahead and put a nice fruit garnish, just to make this look nice
Itˇs always nice to have a little bit of fruit in breakfast
So these are actually peppermint leaves, but you can use mint or anything else that you
like And some berries
This is strawberry, blackberry, raspberry, and blueberries
So, now that my darling assistant has stirred this up, weˇre ready to thicken our sauce
Iˇm going to pour another 1/4 cup of unsweetened soymilk
You just want a heaping fork of the cornstarch Now this is important: you want to whisk this
in so that there are no lumps And then weˇre going to use approximately
1 lemonˇs worth of lemon juice Oh weˇre going to turn that way down
Iˇm going to squeeze in Thank you
And sheˇs whisking; it always helps to have a partner doing this one
There we go, keep stirring Wonderful! All right, and then finally
Keep stirring There we go
All right, weˇre going to turn this back up
I can smell the lemon (Yes!) Now Iˇm going to really stir this fast, so
that it doesnˇt burn, and it doesnˇt get too thick
Okay And thatˇs starting to thicken up nicely
So, our sauce is basically ready And the last thing Iˇm going to do is just
to add a little bit of dill Now this is optional, because Hollandaise
sauce isnˇt traditionally made with dill, but I like the taste and so I add it
Okay, now that weˇve got the sauce ready, weˇre just going to spoon it over so that
it completely covers the tops of your Vegan Egg Florentine
Here we go And if you love Hollandaise sauce, which I
do, you can put extra sauce Now, well fancy breakfast we kind of need
fancy breakfast drink So what weˇre going to do is weˇre going
to make a non-alcoholic version of a fancy orange juice drink, which is usually done
with fresh orange juice and champagne Today weˇre going to do it with fresh orange
juice, so about half a cup of fresh orange juice
And this is just a sparkling pear I like to use pear because itˇs not quite
as sweet as the sparkling apple juice, but you can use any sparkling fruit juice
Sometimes you can find sparkling cranberry or sparkling raspberry, and that can be nice
too; then you end up with a pink drink And then I kind of like to float a raspberry
in it, just makes it even fancier There we go
All right! So, are you hungry? Yes! Me, too!

Absolutely! It looks ready! So, youˇre going to need a fork and a knife
to eat this dish Itˇs very Western
You cut your piece, your bite-size piece, and try to get everything in there
