Well, I'm over here cooking some vegies.
I've got some brussels sprouts caramelising
that are gonna taste delicious, but I wanna show you how to jazz up
your vegetables through using breadcrumbs.
I know it's not the first thing you think of
when you're talking about vegetables is breadcrumbs,
but when you have these beautiful...
Hear that? Crunchy, crunchy breadcrumbs.
What happens is you can really change the texture
of what it is that you're serving.
So I'm gonna throw some old, dry bread into my food processor.
The important thing here is we're using something
that would normally go in the garbage can, OK?
You wouldn't normally use this old dry bread
but by turning it into your own breadcrumbs,
you can turn it into delicious flavoured food.
I've got some thyme leaves and I've got some fresh butter
that I'm gonna drop in there as well.
And then I'm literally just gonna *** it up.
You go ahead and blend that up and then you make this delicious crumb...
..which you can then pour on out, throw onto a tray,
and then just pop it into the oven, just for a minute or two,
and that butter is gonna
sort of caramelise those crumbs ever so slightly.
Now, what we're gonna use this for
is just a sprinkling over the top of our brussels sprouts.
It's gonna change the texture and give this delicious crunch,
with a little bit of seasoning through it, the flavour of the thyme,
and just a little bit of salt.
So just toss those together, in the oven for just a couple of minutes
and it's good to go.
Right, so you can see I've got my brussels sprouts here.
This really works for any kind of green vegetable.
You can use it on broccoli or some green beans.
You can throw it on a mac and cheese or you can...
Different types of pasta dishes, it works really well with, as well.
So it's really quite versatile.
So once your brussels sprouts are done -
these have been par-blanched and then just finished off
with a little bit of butter or olive oil in the pan.
You can just pick them up, bring them over to your serving dish...
..and you've got a delicious plate of green vegies.
But you can transform this into something
that not only you and your partner are gonna love
but the kids will love as well - let me show you something.
After just a couple of minutes in the oven at, like, 180 degrees,
you end up with the butter being melted
and the flavour of that going through the crumbs,
and then you can just go ahead and sprinkle those straight over the top.
It works beautifully if you're gonna gratinate something.
Like I said, pasta. I've even got a bowl of carbonara here.
And I like putting just a little crumb on the top of my carbonara
because it gives it that beautiful little crunch
that you don't find in a bowl of pasta.
You can use it in so many different ways.
Now, when it comes to making your own breadcrumbs,
keep all this stuff, all the old crusty bread.
Don't let it go into the garbage.
If it gets a couple of days too old
and, you know, it's getting a bit too hard,
keep it because you can just throw it into a blender, blend it up.
You can even blend fresh breadcrumbs.
I've got some here where you've got fresh bread.
And, again, the same thing.
You just throw it into your food processor, and it will crumb up.
You can leave it nice and coarse like this,
or you can take it really fine as well.
So you can do it with dry bread and fresh bread.
You can even stick these into a Ziploc bag,
pop it in the freezer
and then you'll have fresh breadcrumbs whenever you want.
That's it, a really simple way to use old bread
that turns it into flavourful meals that your family's gonna love.
