Okay now that we've got our potatoes on our sheet pan, we are going to go ahead and salt
them and do an even layer of Kosher salt; awesome. We want to be sure that we coat all
of our potatoes evenly with vegetable oil and this is really going to help them brown
and create this nice crust on the outside of it. What we are looking for is we are going
to place some in a 400 degree oven until they are a nice light golden brown on the outside.
I would imagine about 20 minutes or so. You want to make sure they are nice and golden
on the outside. If you try to remove them too quickly, then what happens is they stick
to the sheet and it makes them very hard to get off. So just let it cook until they come
off the sheet pan really easily and that will really help make for a crunchy potato and
obviously taste really good. That will give your empanada filling a good texture. Now
we are ready to go into the oven and
let them cook.
