What’s Valentine’s Day without chocolate? And even if you don’t celebrate it, eating
chocolate is always a good thing, right?. I found this recipe for Black Bean Brownies
on No Meat Athlete’s website shortly after I began my vegan journey and no, you can’t
taste the beans. This is another one of those recipes that I’ve taken to work several
times and everyone loves them. So, if you try this recipe, please let me know how it
turns out in the comments. We’re going to start by mixing the dry ingredients.
1 ½ cups of whole wheat flour, 1 teaspoon of salt and 1 teaspoon of baking powder, 2
¼ cups of raw sugar, 1 ½ cups of cocoa and 4 teaspoons of instant coffee powder.
Mix the dry ingredients until everything is well combined.
Next, we’re going to drain a can of black beans and rinse them well until the water
runs clear and all the bubbles go away. Add ¾ of a cup of water to a blender or food
processor, then add the beans and puree them. Then add that mixture to the dry mix along
with 1 teaspoon of vanilla extract, and 1 cup of water.
Stir it all together. This may take a little bit of work. And pour the batter into a 9x13
pan. I lined it with foil and then greased that and I also left the sides a little bit
longer so that it would be easier to remove then brownie cake or whatever when it's done.
Bake it for 25-30 minutes and rotate it halfway through. I actually ended up baking mine a
little bit longer than this, maybe 35…maybe almost 45 minutes. I'm not sure. But just
keep checking it. And make sure that the center is firm when you take them out.
Let it all cool for about 10 minutes, then lift the cake out with the foil that you left
hanging out on the sides. Brownies without eggs. It can be done.
These are perfect for Valentine’s Day or any day of the year.
