Hello and welcome to Archana's Rasoi (Kitchen)!
We get bored with eating the same thing everyday.
Sometimes you need a change.
Since all you viewers requested a quick, easy to do Chinese recipe, the way it is made on the streets or fast food restaurants,
For more on this, stay tuned to Archana's Rasoi!
Today I'm going to teach you to make Chinese noodles.
Let's take a look at the ingredients we will require.
2 packets noodles (boiled), Cabbage 1 big cup, Carrot 1 small chopped, 7-8 French Beans chopped,
2-3 spring onions, 1 Capsicum chopped, 1 tbsp ginger, garlic, green chilies crushed, 1/2 tbsp Soya Sauce
Salt to taste, 1/2 tbsp black pepper powder, 1 tbsp chilli sauce, 1/2 tbsp Ajinomoto, 2-3 tbsp oil.
Now let's begin!
First, we will heat up the oil
Street Chinese food is cooked in a huge utensil which we don't usually have at home
We will have to use our aluminium vessel that we have at home. So let's start by heating up our vessel.
Add 2-3 tbsp of oil.
We are going to use a little more oil than usual for this recipe.
To avoid your noodles from getting sticky, take a vessel full of water and boil it and then add the noodles to it.
Let it boil for 2-3 minutes and then drain off the water from the noodles.
After draining the water from the noodles, we will wash them under cold water
When the water from the noodles is gone, we put 2 tbsp of oil so your noodles stay free and don't get entangled with one another.
Let's add the ginger, garlic and green chillies crush
The temperature should always be high
Now add the spring onion
Add the French Beans.
Add the chopped Capsicum.
Carrots.
Cabbage.
Now let's mix this properly. Make sure the temperature is around 800 degrees.
Chinese vegetables are usually a little under cooked
Try cutting all the vegetables as fine as you can.
Important tip: Whenever you cook Chinese, make sure you wash (and dry) your vegetables BEFORE you cut them
If you cut them before washing, then your recipe will become too sticky and watery.
Now to this we will add salt as per taste
Now add Ajinomoto around 1/2 tbsp
Chilli sauce 1 tbsp
Soya sauce 1/2 tbsp
And 1/2 tbsp black pepper powder
Now let's mix all this together properly.
This a recipe for veg. noodles
If you want to make the same recipe non vegetarian, you can make small pieces of eggs and add it,
If you want to add shrimps to it, you can boil it a bit and add it as well
If you want to add chicken to it, you can boil it, remove the shreds and then add it. This way you can eat different types of noodles!
So now our mixture is done. Make sure you don't overcook or under-cook it.
To it, we will add these boiled noodles.
After you add the noodles, it might be difficult to mix it with just one spatula so you can use two spatulas instead.
So the noodles don't fall out of our vessel
The temperature for this has to be the highest.
Here, I have kept it at 1300 degrees.
We will just continue to mix it on the high flame
Looks like everything has mixed properly.
If you want to try out more variations for this recipe, then you can also add finely chopped red and yellow capsicum.
Now our noodles are ready, let's take them out.
