Hello, this is Ari :).
Today, I'm brought a delicious chocolate recipe for upcoming Valentine's Day.
I put myself in my subscriber's place. What ideas did I have for Valentine's Day gift when I was a student?
I think I thought about 3 things: affordable price, quick & easy recipe, and of course great taste!
So, I've decided to make chewy chocolate paves~! I'm finally making this tutorial as I also got a lot of requests for chocolate pave.
Then let's start todays fun and creative cooking! Zoom!
Today's ingredients!
Let's make pretty, heart-shaped chocolate paves.
First is 380g of dark chocolate (couverture type).
As the taste of chocolate is important for today's recipe, I prepared couverture type.
180g of whipping cream. Heavy cream with higher animal fat would taste better for this recipe.
40g of softened unsalted butter at room temperature
8g of corn syrup. This will make the chocolate texture chewy.
And dried diced strawberry and strawberry powder!
The lovely heart-shaped silicon mold which I will be using today!
If you don't prefer making shaped chocolates, then you can use a square container with wrap covered on the bottom.

Then let's start!
Step 1 - Making chocolate batter First, double boil chocolate on warmed up water on low-heat! Everyone may already know this, but it's better if you can get a bowl that's bigger than the saucepan when double boiling to avoid direct contact with the steam
As I was lacking couverture chocolates, I mixed chocolates for coating on 1 to 1 ratio.
Slowly stir with the spatula to melt the chocolate~
When everything melts, turn of the heat and put corn syrup. Corn syrup will bring the chewy texture of chocolate.
Now you need to warm up the whipping cream. Boil this very quickly until you see bubbles on the edges.
Mix in well with the melted chocolates.
When you put and melt in the butter, it's done! Isn't this super easy?
Now you get this glossy chocolate batter.
Pour in dried diced strawberries~~ This is made by drying strawberries. You can easily find them online.
Mm~~ It should be good! I put the diced strawberries, but I think it would taste good if you put nuts or crumbled Oreos too!
Step 2 - Filling in the mold Now I will fill the silicon mold by piping with the piping bag.
Gently hit the bottom of the mold so the chocolate batter spreads evenly.
Step 3 - Freezing the chocolates Everyone has a different fridge with different specifications. Just set in the freezer until chocolates are completely hardened.
Step 4 - Removing from the mold I've set in the freezer for about 1 hour. Please note that if you put much chocolates for coating, it will quickly harden but the texture will get hard as well rather than chewy.
Step 5 - Deocration! Now I will be putting strawberry powder on the outer layer. You can cover just the top or coat the whole thing by putting and shaking the chocolate and the powder in a plastic bag.
Any kind of powder, such as cocoa or green tea, would also go well.
Tada~ Chocolate Pave with Tangy Strawberry Flavor is completed!
It's so cute putting them together in a shape of a clover.
To give you guys tips on wrapping, you can put it in a parchment cup and put in a chocolate box. Or use a case for red bean jelly (Yanggaeng is Korean dessert).
I will try this~ it's little soft but not to smushy.
The soft and chewy texture. I think it's a sophisticated taste as the scent of strawberry fills in your mouth as you feel the little diced strawberries when you chew.
The tangy flavor of strawberry powder balances the sweet taste of chocolate.
I love it. This is my kind of chocolate!
I can also feel the strawberry seeds in my mouth. Interesing taste!
Rather than making with everything strawberry, flavored I think it tastes better when made with combination of intense dark chocolate and tangy strawberry powder.
For chocolate paves, when you mess up the combination of ingredients, the coated powder can get soggy or the texture may get smushy.
But I personally like how this recipe has the just-right chewy and soft texture.
