ALIE: I'm Alie.
GEORGIA: And I'm Georgia.
We're best friends and cocktail connoisseurs.
We love taking trips and eating stuff
and enjoying fabulous drinks.
ALIE: Then we come home and throw a party
for our friends inspired by our travels.
This is Tripping Out with Alie and Georgia.
I heard things about Marfa.
I heard nothing about Marfa ever,
including the name Marfa.
ALIE: I heard about Marfa through some bloggers.
I've seen pictures here and there.
I was like, what is this place?
They described it as "The New Austin",
which means it's very hip
and artsy and like a little under the radar.
There's one traffic light, a roller derby team
and a bar that used to be a funeral home.
Yeah, and you can learn
how to make biscuits from a real life cowboy.
I know. And there's a hotel with teepees...
Plus, the Marfa lights, a weird phenomenon
that happens in the sky after dark.
And don't forget the tequila cocktail
that is not a margarita.
So I said, "Georgia, we have to go.
We have to try everything that this little town
has to offer and then we'll come home
and we'll share Marfa with our friends."
Marfa.
Marfa is really easy to get to.
You fly into a really, really tiny airport in El Paso
and then you just drive a million and a half hours
through the desert and then, boom, you're there.
And then on the way in, you also randomly
in the middle of nowhere pass a Prada store.
It's an art installation.
It's a funny sight gag because it's this boutique
in the middle of a vast, barren desert.
It's in the middle of nowhere.
It's not actually a store.
No one can go in.
You know, you can tell that people in Texas are nice
because no one's busted in or peed in it yet.
GEORGIA: It's a great piece of art.
It's thought provoking.
ALIE: It's also a really great background for your Facebook page.
Look like you're in the middle of nowhere.
ALIE: After that dusty drive,
we checked into a very unique hotel called El Cosmico.
El Cosmico has teepees, tents and trailers.
It's an 18-acre camp ground.
The owner is this woman named Liz Lambert
and she grew up on a ranch in Texas.
Liz envisioned a laidback retreat that captured
the quirky West Texas vibe.
Yeah, I'm so excited.
Are you kidding me?
It's just as cute as a bug in a rug except it's a trailer.
Pink glitter.
This is the cutest thing I've ever--
I would live here for real.
Oh.
Georgia, these are some pimped digs.
This is awesome. I can't wait to see your tent.

All I want to do in life is sleep in a teepee or a tent.
Oh, this is adorable.

This place is made for us.

ALIE: The best thing about El Cosmico
though is that you can learn
how to make legit ranch style biscuits
in the great outdoors.
I loved Chef Lou.
I hate to put you gals to work in your little prom dresses out here.
Oh, no. We get messy.
I loved him more than was comfortable for both of us.
GEORGIA: Chef Lou grew up here in Texas
and his sister is Liz who owns the hotel.
Chef Lou has a bunch of restaurants in Austin
and around the country.
He makes the best biscuits I have ever had.
So I've got flour, baking powder,
baking soda, salt, sugar and now butter.
Now the buttermilk makes them nice and fluffy.
And then if y'all weren't here
I'd dip my big old hands in there.
I don't mind.
Are you all okay with that?
Yes, of course. Are you kidding?
You want to kind of make this to piece size.
He barely mixes them.
You think cowboys work harder
but when it comes to biscuits, no.
You don't want to overwork this dough.
All right, now I'm just pushing it.
So you got to chill out when you make biscuits.
You need to not work too hard.
You've got to chillax.
You've got to chillax.
Get it to about an inch.
I've never seen the double handed.
Did you all develop this? I like it.
This is how we drive.
He uses an old pipe
that he's beveled as his biscuit cutter.
So sexy.
Just cut through and give it a little twist.
One thing that he sort of honed in on is
how to cook in cowboy with Dutch ovens over hot coals.
All right. Now do a little spread out.
Perfect. All right.
This is so cool.
Now put about the same amount right on the top.
This develops an oven.
Oh, my God, look at that.
You can cook the perfect biscuit in these Dutch ovens.
That is gorgeous.
We've got our biscuits also known as bisquittes.
We've got some migas,
we've got my version of a corn beef hash.
You all sit down.
And instead of corn beef, we use smoked brisket.
Oh.
But the same thing, and then because we're in west Texas,
we do green chili grits.
Oh, my God.
This is the best biscuit.
I love these biscuits
because they have this crust on the bottom
and the top and then the sides are so soft.
I love to cook outdoors because of the open fire
and kind of the oh, oh, oh, I'm cooking on open fire.
But I just think that food tastes better, doesn't it?
It totally does.

At what point can we call ourselves cowgirls?
Not yet, right?
No. I'll make that decision.

Now how about those Marfa lights?
Marfa lights are a phenomenon.
People drive to the edge of town every night
to witness the strange event.
I'm gonna knee you in the face.
ALIE: It's kind of a must-do when you visit Marfa.
It's little blinking lights in the horizon.
No one knows what they are.
They've sent scientists, they've sent mystics.
Everyone's like, I dunno.
Don't try and feel me up.
We're just friends, Georgia.
Look, look, look, see.
Right there, right there.
There's another one.
They've been around for like a hundred years,
so it's not like it's modern technology.
It's like shooting stars coming up from a mountain.
Kind of.
I kind of think it looks like some dude
with a flashlight in the middle of the dark fields.
No.
I thought it looked like little sparks,
little sparks of light traveling up
and disappearing.
I love that you don't know what it is
because you can imagine what ever the hell you want.
Thing about Marfa...
I feel like it's deeply, artistically unsettling.
Mysterious, mysterious Marfa.
ALIE: Up next, a shot of Texas tequila
in the most unlikely of places.
I'm new to spigots.
ALIE: And then, a full on shark attack.
Hey, that's my baby.

This is awesome.
Marfa is kind of windy.
I can see why people would traverse
the dusty plains for this experience.
This is paradise.
Marfa, it's small but there's little things
that you can poke into.
There's the little museums and there's little boutiques
and there's tons of art galleries,
which means you can go in and just look at stuff
and not buy anything.
ALIE: New York artist Donald Judd
came to Marfa in the 1970s
and fell in love with the place.
Yeah, he transformed a lot of the old buildings
into art spaces.
Other artists followed his lead
and now there's a pretty cool art scene here,
along with some funky boutiques.
This is me.
It's great.
MAN: It's actually a tequila tower.
Shut your mouth.
So we keep tequila at the top.
Drink tequila out of a giant Marfa water tower.
I need it. Thirsty out there.
To things all wrong or right?
Welcome to West Texas.
So wrong or right.
ALIE: Mid Century Marfa is up these little stairs
on top of a Laundromat
and it's just this lady's house.
I feel like we're breaking into someone's house.
And you go into different rooms
and she has this beautiful vintage collection
full of men's clothes, women's clothes and jewelry
and she's just kinda hanging out.
There's no place you're not allowed in.
Everything's for sale.
Dresses, this way.
ALIE: It was kind of somewhere between
a boutique and a garage sale.
I like tacky things.
The lady who owned this dress is probably dead.
Vintage.
ALIE: After dropping some cash,
it's time for a feeding frenzy
at one of Marfa's finest establishments.
Two words, Food Shark.
If you go to Marfa, Texas you're gonna eat at Food Shark,
partly because it's the best food in town
and also it's inescapable.
This guy has like seven restaurants in a town
full of nine people.
I feel like you're pretty much our mom.
You're just feeding us like almost every meal.
And he does it really well.
It's not like, "I guess we'll have to eat
at Food Shark again."
No, the food is so good.
I really want to get the Marfalafel
because the name is hilarious.
Oh, great.
You bet, you got this regular marfalafel,
we got the barbecue marfalafel.
Yeah, yeah.
Yeah.
Yes.
And I want the shredded beef tacos
because shredded beef and tacos, you know.
Perfect.
I don't need a funny name.
Yeah.
Food Shark dude knows his stuff.
It's kind of Southern style comfort food
but with a little bit of like
a kind of a fresher twist on it.
So this falafel-- it's got falafel in it.
And then it's got bacon and then it has cabbage,
homemade buttermilk dressing and barbecue sauce.
And the--
This is freaking the stupidest bacon I've ever had.
It's kind of--
It's a little small for an entire family.
Beef brisket taco has homemade salsa verde
which is one of--
It's like my favorite kind of salsa
and smoked beef brisket and you have it.
Salsa verde is spicy.
Barbecue sauce is really sweet, really tangy.
A good amount of smoke from that and from the bacon.
So I ordered it and Georgia ate it.
That's pretty normal.
Yeah, sure did.
It's great. It's like a-- It's a crazy wrap burrito.
Yeah. That.
This is freaking stupid.
Like this, the smokiness from the bacon,
the deep friedness from the falafels--
I think that like star is the barbecue sauce though.
Yeah, the barbecue sauce is really sweet and really tangy.
Super smoky.
There's something about bacon.
That smoky sweet feeling, you have to--
This is the best thing I've eaten in Marfa.
This is the best thing I've eaten in Texas.
Mmm.
ALIE: I wonder if our friends would like these falafels.
Mmm.
Okay. Well, it's time for a stiff Texas cocktail.
And for that we go to a former funeral home.
I'm super scared of death.
So funeral parlors don't excite me
but if you tell me that it's a bar
inside of an old funeral home, okay.
A lot of hip people hang out there.
A lot of hip bands play there.

Yes, we heard some live music.
Song about his dead friend, we were in a funeral parlor.
It's all good.

Well, we've been in Texas for a couple of days and all we've had is beer.
So we kind of could use a cocktail.
And I haven't had a Paloma in a while.
Paloma is grape fruit and tequila and citrus.
It's great.
A margarita rock salt is like my go-to drink.

We got a Paloma. You can use grapefruit soda or you can do grapefruit juice.
It was refreshing.
I used a Mexican sparkling water for your Paloma
which is very popular here in Marfa.
Extra juice.
Oh, my God, this is my first cocktail in Marfa.
We just use the cane sugar.
Yeah, it's really tart too.
It really compliments the fresh lime juice.
You can tell a fresh lime from a mile away.
In fact, when we pulled up parking I was like,
You're like my wounds hurt.
What makes a good Marfa tourist?
Someone who knows the reason to come to Marfa
is just to relax.

ALIE: Up next, Georgia and I learn
how to roll with the locals.
How many points do you get per chair?
ALIE: And we dig in Tex-Mex style.
I really have a huge fear of roller skating.
I used to be good at it and it terrifies me now
because I really hurt myself doing it.
ALIE: Marfa has a roller derby team
and it's very popular.
The whole town comes out to watch.
Basically, it's two teams of five girls.
Four girls do everything
they can to block the other team
so that their scoring player--
GEORGIA: Also known as the jammer.
ALIE: Yes, so the jammer
can make a lap around the other team.
So I thought this is the perfect opportunity
for Georgia to conquer her fear of roller skating.
I knew that wouldn't work.
About to put that on backwards.
If I had like pillows taped to every part of my body
I would have felt a little better.
You guys are suited and booted.
I'm terrified.
Here, wrist five.
Stopping, you can snowplow, it's the easiest way.
Just push your heels out.
All right, let's take it to the track.
Let's break tail bones.
Oh, God.
Alie.
I had gotten half a lap and I was like, this is great.
And I turned around and Georgia was on her butt.
Done.
Do one lap together.

You didn't wear tiny pants for nothing.
Okay, ready?
There's a stance that we all have to be in
where it's like basically like you're squatting,
like you're taking a dump in the woods, okay.
You know what?
You never learn anything if you're not ever vulnerable.
Exactly.
I was really happy that I had gotten
around a couple of times without falling.
I know I looked ridiculous, but I figured,
you know what?
Good, there, I didn't get hurt.
I'm not gonna chance it again.

And it was so much fun watching.
I was fine there.
Yep.
I'm just trying to cross you as many times without you killing me.

Well, I think she was impressed.

Oh, and then you get them for me.
Oh, my God, you're like the protective boyfriend
I never had.
These girls could eat me for lunch.
And like, look elegant doing it.
It was mostly fear driven.
I realized that this is just adrenaline telling me
what to do to get--

All of a sudden.
Annie Fall.
Oh, that's a wrap up.
Then it prepared me for sitting down
and eating a huge plate of enchiladas and nachos
and beers with these girls
'cause I was like got to make some room.
Way to burn my whole mouth hole with this stuff.
It's so good.
It's a good trick to sell beer,
just make it super hot salsa.

The best part is the bottom.
It says, "Suck it up, Buttercup."
She's single.
She is single.
This is single.
It turns out that all these girls are like really brilliant,
smart, awesome girls.
And they told us about Marfa
and they said, yeah, I just, kind of,
wanted to get away from it all.
I really, really thought that this would end with one of us
in the emergency room.
I'm so happy.
That's good because there's no emergency room in Marfa.
Just no shame when it comes to Texas eating.

It's kind of like a beignet, sort of.

And then you put it inside.

It's pretty yummy.

It's not a party until someone draws
something obscene on the table.

and a killer cocktail.

I think people who hear about Marfa want to go
but it's so hard to get to that it was kind of cool
to bring the essence of Marfa back.
Georgia, how many cocktails did we have in Texas?
Like two?
They're like me. They like their beer.
We wanted to pay homage to the Texans
who love beer so much
but incorporate the delicious Paloma.
A little Paloma, a little beer, very refreshing.
If we would have made a cocktail
that didn't involve beer,
I feel like that would have been a huge insult to Texas
because that is what's in their veins.
We would have been lying basically.
1.5 ounces of tequila.
We're gonna do an ounce of grapefruit juice.
So even though you're using a citrus juice
like grapefruit, you still want to use lime
'cause it's gonna give it a sour punch.
0.5 ounce of lavender simple.
So this is just equal parts water and sugar,
slowly simmered and we also put a bunch of these
little flower buds, then just strain it.
Let's stir some ice in that, introduce them all.
Hey, guys, you're all friends.
I think you can do 1.5 ounce of beer.
I think so too.
In layman's terms that's a splash.
Well, y'all just put a splash of beer in there, y'all.
I don't know, man, I think the straw is necessary,
you know, 'cause this is gonna go right up
my nostril when I get a sip of this.
Yeah, jam it in there.
Texas tea.
Oh, you know what we didn't put in it?
Salt.
Put a little tiny pinch of pink salt in there.
The other thing that's great about
this is there's not so much grapefruit
to make it a pink drink, sure there's a flower in it.
Shut up.
Perfect.
I liked that falafel though.
The falafel was just the size of Texas.
It's like the size of an armadillo.
No one can finish that.
I feel like this is bigger than your cat.
So we decided to come home
and make something on a smaller scale.
Lose the carbs.
Put in some butter lettuce for God's sakes.
Lettuce cups, man.
It was super, super healthy.
Marfalafel.
This is how they cooked to settle America...
Chef Lou totally inspired us
to bring that kind of biscuity
goodness home to our friends.
So we made these great little biscuit
frittata sandwiches.
Frittata, there is roasted jalapenos,
there's breakfast sausage, there's cheddar cheese,
there's heavy cream in it but you can eat it
any time of the day.
Everyone loves breakfast for dinner.
I'm just gonna cut these in squares.
Put a bunch on here.
There's sausage and cheese
and all kinds of delicious things.
It's a frittata but it's with biscuits.
It's cowboy breakfast any time of the day.
Oh, no, I accidentally got two.

I got two reactions from people when I told them I went to Marfa.
One is, "Oh, my God, you went to Marfa? That's amazing."
Other people who say, "I'm sorry, what? Where?
No idea."
Marfa.
Have you heard of it?
So it was really cool to bring Marfa back
to the people who knew it and loved it
and the people who had never experienced it,
we could tell them all about it.
Not all people are gonna get to Marfa,
so just bring it to them.
Okay, so the deal with this cocktail is--
Which you're halfway done with already.
It's a play on a Paloma and some beer on top.
And I hate beer and I'm in love with this.
A lot of people in Los Angeles have played cowboys
but they haven't eaten like cowboys.
Eat up, everyone.
So this is the Marfa party.
This is bisc-tastic.
ALIE: So Marfa is like this really artsy town,
so feel free to draw anything you want
on the table including *** stuff that we will cherish.
GEORGIA: Marfa taught us that if you think
something's gonna be a little weird,
just do it anyway.

And it's a great place to just do what you want
and do what you're good at and find your little niche
and just punch it in the face and get it.
