I’m Cecilia Pozo-Fileti, a multicultural nutrition expert.
Soy has been around for over 3,000 years and many cultures have built a healthy diet using
that special bean. It’s a powerhouse of nutrients, protein, carbohydrate. It’s a
great vitamin source. Soy is good for our heart, it’s good for our bones and is also
an agent in prevention against many forms of cancer. For minorities, heart disease,
stroke, and diabetes are a real concern. Our children are a great risk and soy can get
them off to a great start.
Here are three easy ways for kids to enjoy soy: breakfast as a cereal, use it as a snack
and maybe even in an energy bar. Here’s something else to keep in mind, try modifying
your favorite traditional recipe by adding a soy product. A fajita made with chicken
and tofu would be great.
Lactose intolerance can be an issue for minorities, especially African-Americans and Hispanics,
but soy products can be the answer.
Soy yogurt and soy milk are an easy way to get Vitamin D without the lactose. Rushed
at breakfast time? Try a liquado or fruit smoothie. Soy milk with fresh fruit is a great
quick start. Small, simple steps and small solutions are a great way to introduce soy
to your kids and to your whole family. Say, “Yes, to soy. Say, “Sí, to soy.”
