In today for vermont public
Television cooks maple.
We are here in our brand new
Fanciest kitchen ever.
We are here with pauline boyce,
Vermont maple forest products.
What are you making for us
Today?
>> maple fudge.
>> that just sounds -- that hits
It up right there.
>> it is yummy.
No doubt.
>> i bet it is delicious.
How do we get started with maple
Fudge?
>> i'm going to use two cups of
Maple syrup, favorite maple
Syrup.
Of course my favorite is ours.
>> which is the best.
>> we put this in.
And it is on medium heat.
And we put in a third a cup of
Cream.
>> does it matter when you make
This, if you use fancy amber --
>> your favorite, whatever your
Favorite brand is.
You know, grade is.
And put a little bit of butter
Around the rim.
And that will help it keep from
Spilling over.
>> yeah, so some people when
They're boiling down maple syrup
They put a little pork lard in
There or bacon.
>> yes, so you just whisk this
Together.
And then you let it cook over
Medium heat until a soft boil
Stage.
>> you have a fancy digital
Thermometer in here.
What temperature do you cook it
To?
Just making sure that it doesn't
Catch fire or is it just --
>> because once it hits like
217, then it starts like foaming
Up.
So, if you --
>> this is something you want to
Keep your eyes on.
Oh, the kids are getting noisy
Downstairs --
>> you want to keep your eye on
It because if you don't, it will
Be all over.
Once that has come to the soft
Boil stage, it has to cool down
To 150 degrees.
>> soft boiled just like that
Bubble, bubble, bubble.
>> a lot of, you know, like my
Mom, she would dip it in water
And there you go.
>> there you go.
>> you know what i mean.
Then once it has gotten down to
That cool-down stage, then you
Put it into a dish.
And then you just stir it.
>> okay.
>> and i don't know if anybody
Can see this.
A little bit of --
>> it looks like caramel.
Thick like caramel
>> and you stir it and stir it.
>> we arm wrestled earlier and i
Can tell you do a lot of this.
>> i do.
Grandkids, you know.
What are you going to do, you
Have grandkids.
Then you just stir this up, and
It will change a different color
And it will get thicker.
>> it will start to get a little
White.
>> yes, it will get, you know,
It will get thicker on you.
So, jamie, will you do me a
Favor, please, and butter that
Dish?
>> absolutely.
>> just --
>> we like a lot of butter here.
Extra butter.
I just love how it is not like
Oh, jamie grab the pam cooking
Spray.
Vermont butter, that is how we
Do it.
>> butter your pan that you are
Going to put the fudge in.
>> you make premade pie crust,
Too.
You buy those at the store.
>> i make my own pie crust.
>> that is what i'm talking
About.
I make my own.
>> as you can see, you can see
This is getting thicker.
And it is changing its color.
>> yeah, it is definitely
Getting thicker.
It is starting to hold the
Little pieces.
>> the reason why, the more you
Are turning it, the cooler it is
Getting.
>> no, no, i totally understand.
But it is pretty scrumptious.
>> there is the butter.
>> i notice, here, jamie, you
Have a little blue ribbon here.
What is that from?
>> that is from the vermont fair
Show, and we won best of class.
>> what --
>> for this.
>> what was the prize, desserts
Overall, fudge, candies -- they
Look like my grandmother made
Them but had a professional
Business making really good
Hand-crafted treats.
They're just really unique.
They're beautiful.
>> it was from the specialty
Class.
Every contest has different
Classes.
You know like your different
Grades syrup and whatever.
>> and where do people find your
Products?
Mostly shop online.
>> you can find us at vermont
Maple forest products, and you
Can like us on facebook.
>> like us on facebook.
That is how we do it in the
World.
>> yeah.
>> modern technology.
>> you can do it from your phone
Right now.
>> and we have all of our
Products, some are seasonal and
Some we carry year-round.
Year-round ones maple caramel,
Maple cake --
>> i wish today you were making
Everything.
Next show you are coming in and
Making everything.
>> everything?
>> we have 31 just --
>> 31 products.
That is not messing around at
All.
>> now you have it pretty thick.
>> you pour it into your dish.
You scrape it out of your bowl.
>> i mean, for a lot of people,
Mine -- i mean, you see fudge
Around and you don't know how
Easy it is to make.
You saw the good basic
Ingredients, but the best
Ingredients you can find.
>> you just stick it in the
Refrigerator and let it cool
Down.
>> do you do the knock on the
Counter to get the bubbles out
Or not?
>> no, i just leave it.
I just leave it and there you
Go.
It's done.
>> i'm banging it at my house --
>> see.
>> break the glass dishes.
>> this one here is one that i
Did prior to coming.
>> okay.
So it is all set up and
Everything.
>> we will cut it up.
>> here we go.
>> i mean, how much of this
Stuff -- you are making this
Stuff nonstop, every day?
Production batches -- how does
It work?
>> we all do everything hand.
We -- i have no machines that
Cook this for us.
This is all handmade.
>> handmade.
>> that's right.
So you have to remember, too,
When it is handmade, there is a
Little variable.
Because you are -- you know.
>> when you look at the candies,
That is the coolest part.
They -- none of them are --
They're like snowflakes.
Everyone is a little bit
Different.
Beautiful.
>> then you just --
>> then you just put your
Favorite chocolate, and it
Doesn't matter, just melt it
Slow and easy so that you don't
Scorch it.
Because it will have a burnt
Taste to it and nobody enjoys
That.
>> burned chocolate, no good.
>> and you just swirl it around.
>> wow.
>> and you put it on the
Parchment paper, and then of
Course nothing is better than
Our own maple sugar.
And you just sprinkle it on
And --
>> wow.
>> then you have --
>> so this is kinds of -- kind
Of what the rolling boil
Normally looks like?
>> yeah, it will get more.
This will actually rise up.
>> okay.
>> so like i said --
>> if it starts rising up, don't
Freak out.
>> if this burns me, i'm going
To cry on tv.
>> it won't.
I won't allow it.
I won't let it.
>> all right.
So, you kind of let the
Chocolate-covered fudge set up,
Dust it with the maple sugar and
When do we get to eat this
Stuff?
>> whenever you want.
>> do we wall get to eat it?
>> yes.
Do you want to try some?
>> i do want to try some.
You have to let this set up
Though.
>> i eat that one.
>> it will be a little sticky.
>> wow.
It's like -- it's like chocolate
Covered heaven.
And it is just so maply and i
Love it.
>> it is.
It is very good.
>> delicious.
You don't know how long it has
Been since i have had dessert
This delightful.
>> we have hard candy, maple
Fudge, caramels --
>> that is what i think is
Amazing.
Hand-crafted sweets with vermont
Grown maple syrup.
That is the best of both words.
That is what makes the community
Vibrant --
>> it is local.
Keep everything local.
>> keep everything local.
Thank you for coming out today.
>> thank you.
>> we will send it back to
George.
