Hi! I'm Claire Bahn and I'm a gluten-free actress. I decided to do a special segment
of my blog all about being gluten-free. I've been gluten-free for about five years now.
I have an allergy to wheat and gluten intolerance. If you don't know what Gluten is, it's basically
anything that has wheat, rye or barley in it...like bread or breaded items and anything
with soy sauce (which has wheat in it).
My family and friends have learned to deal with my gluten intolerance but many people
still think that there is nothing available for me to eat. That is not the case. There
are lots of great things that I'm able to eat and I'm here to show you.
Basically, I'm here to show you that living gluten-free isn't that bad.
One of my favorite things to eat is called Pao de Queijo or cheese bread; it's Pan de
Queso in Spanish. Anyone I've ever made this for has been very appreciative also I have
a Brazilian friend who actually uses the same mix by Yoki and you can find it at amigofoods.com.
So you start out with the package cut off the top and put it in your bowl. It makes
little bit of mess so you have to be careful with the powder mix. Next thing is to add
2 eggs, then add half a cup of water and start mixing together. I like to use a spatula.

Just because my family and friends like cheese I tend to add extra cheese to the mix I particularly
like a cheese called Cotija, it's a Mexican cheese it's kind of like a Parmesan, a dry
salty cheese. I just add a little bit of that to the mix about 4 to 5 ounces. This is what
the cheese looks like and I just add it directly to the bowl and keep mixing.
Okay so you could kind of an odd looking mixture at the end, you can see a little yellow that's
the flour mixture and all the white is the cheese. Then you will need to make little
round balls basically like this, a nice little bite, about an inch and a half in diameter.
Then just put it on the pan about an inch and a half apart.
I think this is actually something the kids will definitely like it's savory and cheesy.
If you have gluten-free kids, this is something you can try on them. I've given it to a few
kids and they been very happy with it. So this is what your Pao de Queijo looks like
before goes in a 350° oven for 20 minutes to 25 minutes.
And then you have wonderfully fabulous cheese bread so I'll be right back
and you'll get a look at what these look like after they come out of the oven
So be careful taking them out of the oven because they will roll around a little. So
there you go nice round balls of cheese bread deliciousness. You can see these darker areas
that's actually the cheese anyway we let it sit for about 5 to 10 minutes to cool down

Okay so we're back the Pao de Queijo has cooled and I put it in my lovely little basket. Yum!
