We are in Padrón where the famous pepper comes from. Now called pepper from Herbón.
We have got a new denomination of origin and now it is called pepper from Herbón to distinguish them from the other ones.
You can find this pepper nowadays everywhere but they are not from Padròn.
People see this kind of pepper and instantaneously they call them pepper from Padrón but they aren't.
If someone wants to eat the authentic pepper from Herbón they should know that the time to eat them is from May to the end of October
The other ones they found in the market are not the authentic ones, they are not from Padrón.
Anyway it is very easy to notice the difference between them for its smell, its taste and its colour,
nothing to do with other ones. And of course once they are cooked you can not get confused.
How are they prepared here?
Traditionally in restaurants they are prepared with its tail because it is faster.
However traditionally at home we take out the tails.
We fried them in olive oil.
It must be olive oil because it tastes better and when you remove them you add heavy salt
They are cooked little by little. Don't get them burned.
They must be cooked to average temperature. And very important don't forget to add heavy salt.
There is a proverb that says: "Peppers of Padrón some are hot and some are not".
The joke is to find a hot one.
Anyway the pepper is hot originally but to avoid it we recollect them soon
We recognise them very well but it is not strange to find a hot one in the bag.
Look they became red. This one is a hot one sure. This one is a hot one too.
We must recollect them with this size.
This small size is the best one, well sometimes a little bigger.
And look this green one starts to be hot and when they become red you should be careful,
they are super hot ones. From the red ones we take the seed.
We make the whole cycle taking the seed when the pepper gets red.
Then we make the plant, the plant grows up, we transplant it and the last step is when we recollect the peppers.
We wait until some of them get red to take out the seed and the cycle starts again.
