Add boiling water to a larger bowl and add the Butter to the smaller bowl (like shown) to melt the Butter.
Mix the Plain Flour, Cornflour, Salt, Sugar, Baking Powder, Bicarbonate of Soda together.
To the Buttermilk, add Milk, melted Butter and Egg and mix together.
Add the liquid to the dry mixture until liquid has no lumps. Do not over mix as this will overwork the gluten and give heavier pancakes.
Heat the frying pan on medium-high. When frying pan is hot, add a ladle of the pancake batter. When the pancake is looking bubbly (and a littler dry) flip over. The whole process should take 3min per pancake. Repeat until batter is finished.
Pile on top of each other and drizzle Maple Syrup (or whatever you would like)! Eat hot!
