We are cooking up our fabulous fajitas and I just barely finished cutting my chicken
here and it looks just about ready to keep cooking. Okay one thing that people will like
to know is how long to cook your chicken. I tend to like my meats cooked really, really
well. Not overcooked but to the point where they have some of the, I wouldn't even call
it burnt, taste but kind of the taste that comes from the pan or the grill, like the
blackened almost. Like a blackened chicken. There's a lot of sauce in here so I don't
think we're going to get that blackened look or taste unless you really burnt your chicken
which we don't want to do. But to know when your chicken is done, it's actually looking
pretty good right now, it should feel not wobbly or it should not be pink at all obviously
and some people don't know that but I would hope that most people do because you don't
want salmonella poisoning or any kind of bacteria poisoning. So the chicken I'm going to let
it sit for another 2, 3 minutes. Even though it looks like it's just about there. But I'm
going to let it toughen up just a little bit. So your chicken needs to be not like wobbly
and not like, no pink at all. So make sure that it's cooked just right. And if you like
it a little bit dark and blackened by all means let it cook as long as you like.
