Hi, its Marco from Ehrliches Essen. Today me make "Dürum" - that`s a roll of dough filled with kebap, salad, tomatos and sauce.
For this "Dürum" we need to made Yufka dough.
This Yufka dough is made very fast and easy and i will show you, how it works!
In this dish ist 400-500 gramm of flour (3 1/3 - 4 cups) ... you have to feel it - it should be a non sticky dough.
and here i have 300 ml of water (1 1/4 cups) ...
and salt - thats all we need.
Put the water into the dish with the flour
add two teaspoons of salt
and now knead until you have a nice dough.
I' am back - with the dough.
Today i had to add about 100 gramms of flour. You will feel if the dough is right - it has to be a non sticky dough.
You see - no dough on my hands - this dough ist perfect non sticky.
i seperate this dough into 4 pieces and cover it with a slightly wet kitchen towel for about a half hour.
After a half hour - i put some flour on my workspace and roll it flat.
You dont have to wait for it ... i will do it for my own ;)
Ok - sorry - i forget to film, how i finished the yufka dough in the pan.
just put the flat yufka dough into a coated pan and fry the yufka about a minute on each side.
i am really sorry :)
For the Dürum just add some cocktail sauce ...
some salad ...
the doner kebap ...
... tomatoes ...
paprika ...
onions...
jalapenos ...
and a little bit of tobasco ...
and a least cocktail sauce again.
Roll ist together ...
and ready: our "Dürum" with selfmade Yukfa dough ...
