Today we will make achari aloo.
We are not making potato pickle but will be using spices used in pickle which gives it a unique flavor.
Let's see what all ingredients are required for making achari aloo.
Potato - 500 grams (boiled)
Cumin seeds - 1/2 tsp
Asafoetida - 1 pinch
Black mustard seeds - 1/2 tsp
Fenugreek seeds - 1/4 tsp
Turmeric powder - 1/2 tsp
Fennel powder - 1 tsp
Coriander powder - 1 tsp
Red chilly powder - less then 1/4 tsp
Salt - as per taste (1 tsp)
Garam masala - 1/4 tsp
Mango powder - 1/2 tsp
Green chilly - 2 (finely chopped)
Ginger - 1 inch piece (grated)
Mustard oil - 1-2 tbsp
Green coriander leaves - 1 tbsp (finely chopped)
Add 2 tbsp mustard oil in the pan.
When oil gets heated add asafoetida,cumin seeds,fenugreek seeds,black mustard seeds.
Saute the spices for few minutes.
Now add fennel powder,turmeric powder,coriander powder,ginger,green chilly and potato pieces.
Also add salt,red chilly powder and mango powder.
Now saute for 4-5 minutes.
Fragance of pickle can be smelled from the sabzi.
We have cut potatoes into four parts but you can also use small size potatoes.
Sabzi is ready,now add garam masala and coriander leaves into it.
Spicy and awesome tasting achari aloo is ready,now turn off the gas.
We have used 500 grams potatoes for making this dish.
This much quantity of sabzi can be served to four family memers.
Serve achari aloo with parantha,chapatti or poori.
