For an Italian twist to your next meal, we've got a recipe that will feed some hearty appetites.
And what better time than right after deer season. The combination of venison, ham and
cheese makes today's recipe for venison spiedini a family favorite. The list of ingredients
include one pound of venison tenderloin, your choice of ham, I prefer prosciutto, sliced
provolone cheese, bread crumbs, an onion, a pepper, olive oil and bay leaves. You'll
first need to slice the venison into 8 cutlets and pound thin with a tenderizer. Lay each
cutlet flat. Top with ham and then cheese. Roll each with the venison to the outside.
Roll or lightly coat the rolls in olive oil and pat with breadcrumbs. Salt and pepper
to taste. Place the rolls on skewers, alternating with onion, pepper and bay leaves and cover
with foil. Bake at 350 degrees for 20 minutes. Remove the foil and broil for 1 - 5 minutes
until crispy. The combination of meats and veggies will appease just about any appetite,
including those craving Italian. Because when a trip to Venice just isn't in the works,
maybe it's time to bring a little taste of venison home.
