Hi. My name is Kip. And I am here on behalf of Expert Village. Today we are making a New
York style cheesecake. And we've just got done showing you how to make your own self
rising flour if you don't have any. And now its time to combine the rest of the ingredients
for the pastry crust. But, what we need to do now is we've sifted, as you can see, that
is very fine looking as compared to the general purpose flour that we're going to have to
add. So what I'm going to do one more time is we're going to sift, just like we did,
with, to make our self rising bread, actually I should put these together. We're going to
have to sift the entire bunch of flour. And we'll do that a couple of times as well to
make sure that both types of flour are mixed together well. We're going to do it one more
time. That the sifting stage of flour for pastries and the like is very, very, very
important. This is the second time through the sifting our flour. And this is helping
to mix the two types of flour together. And giving us a much lighter and will end up giving
us a much lighter pastry crust.
