Hey everyone, it's Tara Stiles and welcome to the Livestrong Woman channel. So today,
I'm very excited. I'm going to show you how to make a favorite recipe of mine -- it's
peanut butter, oatmeal and a little chocolate chip cookie. So it's a great thing to make
any time of year. When you have friends over, bring for friends and eat yourself and enjoy.
Okay, so we're just gonna use some Earth Balance butter here. Some oat flour. You can also
use almond flour. Some powdered sugar, that's for later. A little bit of baking powder,
about a teaspoon there. Some dark chocolate chips, or whatever chocolate kind of chips
you like. Oats, your peanut butter, your coconut oil, and a little maple syrup. Some almond
milk. And there we go. So everything goes in the bowl. And all of these ingredients
are pretty soft, so you can actually mix it up with your hands, and that's exciting, so…
About a cup of oats. And here's our oat flour or almond flour. And in with the chocolate
chips, voilà. And we're going to have some peanut butter. So you want about a half a
cup of peanut butter. I'm just gonna spoon it out here and eyeball it, because I pretty
much eyeball everything. But with baking, sometimes you need to be a little bit more
specific than eyeballing. But with peanut you can't really go wrong, so it's a safe
one. Alright-y. And we're gonna use a quarter cup of coconut oil -- make sure you soften
it in a bowl of hot water or over the stove. And there we go with that. That's exciting.
A little bit of almond milk. Again, about a quarter cup of this. There we go. And some
maple syrup. So nice -- sweeten it all up, even though it's pretty sweet already. Alright,
so I'm just gonna get in here with my hands and mix it all. This is the really fun part.
So we're gonna get in here and just kind of get real mushy, mush it all together. And
you'll be able to tell when it starts to look like cookies, which is exciting. And then
we're going to add our baking powder to make sure we get this all even in there. So put
our baking powder in there. Alright. And start mushing again. And this is exciting. Okay,
so we're looking like cookies. Wanna get the little last bits of almond flour and the oats,
because you don't want your cookies to be too wet. So if you are like me and you use
a lot of maple syrup, you might wanna add some more dry ingredients here. So I might
use just a little bit more oats to the mix. Alright. And here we go. So you wanna start
to make little cookies. And make little cookie shapes. And we're just gonna drop them on
our cookie sheet. So here we go. Space them out pretty good. Try to make even cookies,
so your cookies can all be nice and friends with each other and have enough room to blossom
in the oven. Okay, so to finally top it off, we're gonna put some powered sugar on top.
Again, you can take this step or leave it. But to just make it a little bit more festive
and fancy. You know, it's a the little things that get people excited, or at least me exited.
And there we go. Okay, so we're going in the oven. And we'll see you soon at 350 for 15
to 20 minutes. Okay, so our peanut butter oatmeal cookies are done. Here we go. They
turned into more of a long and thin and crisp cookie because, I think, I probably put a
little too much almond milk in them. But it's okay. They're still gonna taste really great,
hopefully. So let's see how they are. Okay, they're a little crumbly because, I think,
I put a little too much almond milk in them, but they taste really, really good. So if
you do this recipe: A little less almond milk, everything else the same. Amazing.
