Hi my name is Kip and I'm here on behalf of Expert Village. In this clip we're going to
show you how to prepare the egg for our German pancake. The first thing we're going to want
to do is place our eggs in our bowl. I'm going to use a Hobart kitchen Aide which any serious
home cooked needs to have one. It is the best tool in the kitchen. The first thing I'm going
to do is beat these eggs until they become frothy and fluffy. If you can see now, our eggs have begun to
capture air, they are 4 stages into the beating of the egg whites. The eggs we kept the yellows
in here and the whites actually have a leveling property. The more air it gets in there essentially
the more leveling it gets or the thicker or more volume to get whatever you're baking.
As the air bubbles begin to go into the egg white and you get more and more thicker and
of course at the very end the last stage of beating an egg especially an egg white specifically.
It would be something of the consistency of a meringue.
