Hi everybody! Today I am going to cook a lovely vietnamese, caramelized salmon
It's my favourite mix of sweet, messy, salty and spicy.
I'll start with chopping chili, garlic and ginger.
This chili, garlic and ginger is a great way to start cooking a lovely sauce
but I want to start with putting it in a pan with sugar and water
to get that nice caramelized thing going. This is a great recipe for the whole
family with plenty of flavours!
When you caramelize you need a lot of patience, you wait for a dark and
strong caramel and then you add the ginger, chili and garlic.
When I'm waiting for the caramelized sauce I want to prepare some garnish
for the fish. I have spring onions, which I am going to chop neatly and place in a
bowl of ice water, after which they will curl up and become a great spring
onion garnish to put on top.
Now I have a nice consistency for the caramelized sauce, so let's add the
ginger, garlic and chili. After that I am going to add fish sauce, which has a
great, salty flavour. It's a very common ingredient in vietnamese food!
Now, my friends, it smells lovely! I can smell the wonderful ginger,
garlic and chili - and look, it's beautiful too!
Now I want to let the salmon cook all the way through. After that, serve it with some
rice and my spring onions on top. I am almost done now!
It's all done! This vietnamese salmon is so easy to cook, but it tastes so lovely
It's sweet, it's salty, it's spicy - and it's messy!
