Good morning! Today we will prepare a delicious starter which is also very easy to prepare.
It's a baked ricotta, with roasted pepper and pesto.
Here are the ingredients: the capsicum peppers (the long variety of peppers)
Then 750 grams of ricotta. One egg.
and then the pesto: An abundant handful of basil.
150 grams of parmesan, one garlic clove.
And then, instead of using pine nuts, we will use hazelnuts.
Now, first thing, i will take the peppers and cut the two ends off.
Let's get rid of all the seeds...then take a baking tray and put lay them like this
on the pan, which will go in the oven. An we will roast them.
They will have to stay under the grill for about 4 minutes, until the skin becomes black and starts to blister.
These peppers have a special aroma and they are also very sweet. This is why I love to use them in this recipe.
Here they are. Four or five minutes in the oven...
While the peppers roast in the oven, we will prepare the pesto.
FAt first, we will use one clove of garlic
and then I will add the hazelnuts. These hazelnuts are already grounded and roasted. About half a cup.
Then I wil add some oil, and I will start to mince everything.
Now we can add the basil.
Another drop of oil, and we let it chop for another minute. Then I will add the parmesan and a bit of salt.
Of this parmesan, I want to save about 5 tablespoons, which I will later add to the ricotta mixture.
Let's add another bit of oil and continue to blend everything well together.
Perfect. Delicious.
Now, look at the peppers. They are all roasted. The skin is blistered.
Now we put them in a little ziplock bag. This will help us take the skin off more easily later on
once they will have cooled down a bit. Let's leave them here for a few seconds...
While we wait for them to cool down
I will prepare the ricotta mixture.
Here, let's move this pan...
For the mixture. We have 750 grams of ricotta, one egg
5 or 6 tablespoons of parmesan cheese, a nice pinch of salt and some pepper, which I will grind.
And now let's mix everything together.
Here, see how nice it looks, Nice and airy and fluffy.
Now, what I want to do, with a bit of butter, I'm going to grease this muffin tin.
Yes it's for the muffins. I will grease six of them, so for now I will make only six portions.
I am greasing the baking tray...
Here, I have pealed the peppers and now I will cut them in slivers.
I will show you now how to prepare this antipasto, which is very pretty to look at.
OK. Take the pepper slivers. Lay them down in a shape of a star. Like this.
A bit of pesto in the center, which will melt in the oven, and then we will put the ricotta mixture on top.
Perfect. Now lets make another one... These will then go in the oven for about 35 minutes at 350 degrees.
When you see that they are golden, you can take them out. Then you will have to wait for them to cool down a bit, before you serve them.
Done! The baked ricotta is ready. We have prepared only six of them, but with the 750 grams of ricotta.
you can make 12. I have made six and now, I will put them in the oven: 350 degrees for 35 minutes.
The starters have come out of the oven and I have let them cool down for about twenty minutes.
Now I can take them out and plat them.
Another one...
Serve them with some toasted ciabatta slices, another bit of the pesto to eat with the bread...
