Today’s recipe is Shahi Namkeen or Baadam Poha Namkeen.
This snack is tasty as well as tempting, even if one is full he/she cannot resist themselves from eating it.
Let us see which ingredients are required to prepare Kaju Baadam Poha Namkeen:
Poha - 1 cup
Peanuts - 1 cup
Raisins - ¼ cup
Cashew nuts(split in 2 halves) - ½ cup
Almonds - ½ cup
Coconut(cut in thin slices) - 50grams
Black pepper - ¼ tsp
Red chilli powder - less than ¼ tsp
Salt - ½ tsp
Heeng(asafoetida) - 1 pinch
Dhaniya(coriander) powder - ½ tsp
Black pepper - ½ tsp
Amchoor(mango) powder - ½ tsp
Jeera(cumin) - ½ tsp
Oil - to fry namkeen
Heat oil in a pan and once it is heated we will start frying poha.
Check if oil is hot enough by putting one poha, if the oil is hot then poha will float on the surface.
Put half of the poha in hot oil and lower the flame immediately as poha turns puffy.
Now take out poha from the pan and filter the oil through a strainer.
Place a bowl below the strainer to collect the residue(i.e oil).
Heat the oil as it has cooled down since we lower the flame earlier.
If the oil is no well heated then the poha does not become puffy. So the oil needs sufficient heating.
Put the remaining poha into the pan and repeat the process.
Now lets roast the peanuts which require mildly heated oil.
If roasted on a high flame in very hot oil the peanuts tend to be cooked outside tand uncooked inside.
Roast peanuts till they turn brown and crunchy then take them out.
Cashew nuts can be roasted in the same oil and also on a low flame.
Once the colour changes remove them from pan.
Almonds too have to be roasted in a similar manner.Remove when they turn dark brown in colour and puff up a liitle.
Now roast coconuts following the above process and take out when it changes colour.
Add roasted peanuts, cashew nuts, almonds, coconuts with raisins to poha.
Let us prepare the spices now
Roast jeera, dhaniya powder and heeng gently.
Jeera and dhaniya can be used whole without grinding.
Add all these spices to poha
if home made chat masala is available then the above mentioned spices are not required.
Just take ½ tsp chat masala and add to namkeen.
Mix the spices well, allowing the spices to blend in.
Kaju Baadam Poha Namkeen is ready.
Let it cool off then store it in an air tight container and you can enjoy your snack anytime upto 2-3 months.
