We have been a family-owned, fish processing company for 20 years now.
We produce our well-known herring fillets a'la Matias,
as well as rollmops, matias with onion...
...herring fillets in salsa sauce, Hagrid's snack and many others.
Our main raw material is fished at the coast of Norway and Island.
We buy fish which are cleaned, filleted, and frosted,
immediately afer being fished,
which results in high-quality products.
The top priority of our company
and our suppliers is possibly the highest quality of a product.
After being fished, the fish are cleaned and filleted.
When the fish are delivered to our company, we start processing it for consumption
which is laborious and time-consuming.
The fish are delivered to our company by refrigerated trucks from Polish harbours
situated in the Baltic Sea area.
The fish are always kept frozen, which guarantees their highest quality.
Having been delivered to our company,
the fish are unloaded in a cold store where the temperature is - 25 degrees.
It is important that a warehouse manager enters it to the system,
which monitors the circulation of goods in our company.
We are now in a defrosting room
in which there are two defrosting chambers just like this one.
Each of these chambers can defrost
approximately 5.5 tones of fish at one go.
Defrosting is a very crucial phase of the production.
The most important factor is the temperature in this chamber.
It can be neither too high nor too low.
It is of importance, since the product may boil
in too high temperature.
Whereas, if the temperature is too low
the fish may never defrost completely.
In a defrosting chamber, there are sprinklers,
which sprinkle the fish with water-vapour.
Air blowers located on the top and at the bottom of the blower,
propel warm air which steadily spreads the vapour throughout the chamber.
Defrosting process is controlled by 2 temperature probes.
The first one is fixed in the middle of the panel.
Whereas, the second one is placed under the panel.
Their aim is to control the temperature.
The proper defrosting process should last from 6 up to 8 hours.
Having been defrosted, the fish are placed in a processing room,
where they are cleaned with running water,
and subsequently throw into huge containers with brine.
The brine
additionally contains a variety of spices,
which have not been changed for 20 years.
The fish stay in these containers for approximately 3-4 days.
In the beginning, the brine is stirred every half an hour.
Stirring is of high significance, as
it makes the brine soak into every single fillet.
Initially, the fillets are pink,
then, they change the colour to white.
After four days of seasoning, the fish are stored with semi-finished products.
They stay there until the next phase of the production starts.
Only well-processed fillets are stored in this room.
Here, the fish are drained off.
The Women put the fillets into a special dish,
in order to drain off the excess of water.
Next, the fish are taken to a production hall
where they are packed into the buckets.
The fillets, after being drained off, are placed on the production tables.
They are poured out from the dishes.
Subsequently, the women
carefully examine the quality of every single fish.
A fillet is approved when it is of an appropriate size,
with white, smooth and uragged flesh.
Only such fillets can be packed into our portion packs.
Tightly closed buckets are put into the machine,
in which they are cleaned, dried, labelled and put down on a pallet.
This way prepared products are stored in the storeroom with finished products.
We are now in a storeroom with finished products,
where the products are stored in the temperature of 0 degrees.
They are usually placed in a forwarding store on the same or next day.
Then, they are put into our refrigerated trucks,
and transported in the temparature of - 4 degrees
to shops situated in different parts of Poland.
Our products are under constant veterinary supervision.
We also supervise the personnel
and equipment used for prodution.
