Hi this is Don, I'm with Executive Caterers and I am going to explain the basic
mechanics of a place setting.
If you've never been to Executive Caterers in your trying to set a fancy place setting
at home don't be intimated by it. Its not that hard.
Some very basic things to remember
if you'd like to make it fancy
you can use either large dinner plate for charger or service plate.
This is usually used to collect crumbs or anything that's coming from
the first, second or third course before you get to the main course.
And when this comes up, your dinner plate
is in a nice clear area.
This is called a charger.
The silverware for the guests, they use from the outside in. So depending on what
you're having, with this place setting, they're going to be having soup
salad, an intermezzo, which is a sorbet to cleanse the palate between
courses,
and entree and desert. So they'll be starting with their soup spoon
and then
salad
and then over to the intermezzo
and
the entree will be this fork
the last spoon is for your coffee if they like the mix cream and sugar, and the dessert
fork is at the top.
If it is a dessert fork it is placed
in the position that these forks in the left or like this
like a left-hander, if it is an ice cream, or anything that is used with a spoon
it's set this way with the spoon for the dessert.
You may or may not have small butter knives, we'd like to use them here for
fancier parties.
The glassware is always on the right for every guest. This is called
an Irish mug, or you can use a cup and saucer.
This is a citation glass or white wine glass and the water glass is always at
the tip of the knife. If there would be a champagne glass it is normally at the
top right hand corner, like two o'clock a the place setting.
Those are just some very basic things to know about a nice place
setting. You can place a napkin either in the center of the table or if you're
pre-setting something it's nice to have on the side so that it's not in their way
when they sit down.
